Chicken and Mushroom Saute

Delicious....I just cooked this and its great. Nearly followed the recipe exactly (I omitted the flour, used fresh mushrooms, added one clove of garlic and some onion)and its perfection; will serve over brown rice.

Kay's Spaghetti and Lasagna Sauce

I tried this last night on a whim. I'd previously tried another homemade sauce(not from this site) and it was the worst, so I was skeptical. However, with this recipe I now have a renewed faith. This sauce was delicious. First off, I only used one green pepper and onion and lots or garlic. Also, because I like a chunky sauce, I didn't blend the stewed and crushed tomatoes. For those who are worried about a thin sauce, I would suggest using only slightly more than half of the crushed tomatoes. I did and the consistency was perfect. I also added extra seasoning like italian seasoning, garlic salt, and red pepper flakes (at the suggestion of other reviewers). I used two tblspoons of brown sugar (next time I might go with only one, just to see what happens). All in all a great sauce. I am soooo looking forward to lunch. My boyfriend also gave it two thumbs up!

Garlic Chicken

Soooo good. Very easy and tasty. I first seasoned my chicken with a bit of garlic salt and black pepper. I forgot to get bread crumbs from the store so I used saltine crackers, finely ground, instead. I was a bit worried but it worked out wonderfully. I also added more garlic to oil and just a bit more cheese. Also, if possible turn the chicken when the top is browned so that the bottom won't be soggy. I tried this with both chicken breasts and chicken breast tenders. Both were great. This is a definite must-try.

Broiled Tilapia Parmesan

This recipe was very tasty and so easy to make. I'd been looking for a tilapia recipe so that I could finally bring myself to eat the fish and this did the trick. My boyfriend thought it was great and even my brother (who does not eat tilapia) gave me a pat on the back. I followed other reviewers suggestions and did not use the lemon juice, I only used 2 tablespoons of mayo. I also added 1/2 teaspoon each of paprika, basil, and crushed red pepper flakes. I did not have any celery salt on hand so I used a dash of garlic salt. Also, I followed the cooking times exactly. This was great and will make again...soon.

Lemon Pepper Chicken II

This recipe was pretty good! If you like the flavor of lemon, you'll love it. For more of a lemon/pepper taste, next time I will use more pepper. I also used unsweetened lemonade flavored Kool-Aid (2pks). It was a hit; my boyfriend loved it!

Chicken Surprise

This recipe was very easy...and good. However, I does require more seasoning, especially for the chicken. I sauteed the chicken and mushrooms together, added the tomatoes and served over rice. My brother, who is picky and never eats leftovers, had seconds and ate more the next day. This is a winner.
