Caramel Nut Squares Recipe

Well, doc...you suggested these to me to use up my sweetened condensed milk experiment, and I did...YUM!! :) I don't do desserts, as some know, but I do enjoy a lil caramel and shortbread...these are SO tasty! :) And so pretty. I even had one, myself, even though I'm not a chocolate fan, and was pleased...just enough chocolate to give it another flavor, but not be overwhelming. I did sub pecans for the walnuts, as that's our preference. These will be enjoyed, greatly, by those I'm sharing them with! Thank you so much for the recommendation :)

Shrimp And Snow Pea Stirfry Recipe

Okay...told you I'd try it, and I did...and was very pleased with the result! It's not complicated or fussy, but, to me, it's just what a stir fry should be...you can taste each element of the dish and they compliment each other so well! I did add salt and pepper and just a dash of hot pepper flakes, cus that's my preference, but that's not enough of a change to warrant a lower rating or review. :) Thanks for the addition!

Savory Triple Cheese Potato Cake with Ham

I picked this up in the Recipe Swap and it was fantastic! :) What a fun recipe. I can't wait for someone to ask what to do with leftover ham, because I will JUMP on recommending this one. :) I didn't change anything other than...ummm...I didn't really measure...and, I'm not sure what the top and bottom are meant to look like, but I did have to serve mine from the springform bottom. Which didn't matter at all. :) So, easy a 5 forks, and am so glad I made it! Thanks, kiddo! :)

Sweet N Spicy Orange Glazed Chicken Wings

I picked these up in the Recipe Swap, and finally got around to making them...they were great! I used all the drummie parts of the wings, and, I've said before that we aren't soy sauce lovers, so I tripled the recipe other than the soy sauce...and only doubled that. But, that's JUST preference, not a fault of the recipe by any means. We had plenty of the marinade left over, so basted them as they were cooking. :) Served these with Aaaazzz's Asian Inspired Asparagus and wild rice. All were fantastic together! These are a nice change, and they're a great addition to the site. Thank you! I'm adding pics, hope that's okay.

Portabella Bison Burgers

Made these, tonight, using venison, I hope you don't mind! :) My boyfriend grew up in Montana, so he's no stranger to bison, but around here, we don't see so many of those. ;) (I know you can buy it, but we have SOO much venison! :) Anyway, they were fantastic. I followed the recipe other than the above, and I used fresh herbs instead of dried, and probably doubled the chipotle. They were firm, but not dry, and full of flavor. Served them with Muenster cheese, fresh lettuce and tomatoes, and we had Chefelaine's French Fried Potato Skewers along side, with my own dipping sauce. Thank you for the recipe. I added a photo, but please just remove it if you don't like it! :)

Kismet Breeze Pizza

I made this on a double dog dare, cus it is a fair stretch from my "usual" type of food...BUT, made it, I did...and, I even tasted it! ;) hehehe..okay, here's what we've come up with...it's Gourmet Buzz Food! I can so see someone cookin' this up at 3am during, or after, a party. :) I made my own crust, but used a purchased sauce. The Spam didn't bother me at all...it's salty and greasy, but so is pepperoni, so no biggie, really, and the veggies, of course, were great(I did dice the pepper(used green cus it's what I had) and onion rather than leave them in rings)! Loved the kick from the chili peppers. I still just can't like Velveeta, though. Not even on pizza. It was funny cus I also don't care for tomato chunks on pizza, so I considered leaving them off...I got more than one "You're kidding, right?" kinda looks when I voiced that. With everything else so non Keni-like goin on, THAT'S what I almost left off? So, I left 'em. hehehe Everyone had a taste, and it was all eaten. I have NO doubt that for those who like Velveeta, this will be fantastic for them, even if they think they don't like Spam! :) You get the full 5 forks for creativity and for being a good sport in offering it up to me, of all people! Oh...and I took plenty of pics.

Tomato Florentine Soup III

This was SO good! I did start it like I usually start similar soup recipes by sauteing the onion and garlic then just adding the flour and making the roux, from that, adding the tomatoes and all the other ingredients, then simmered, and finished the recipe as directed. This didn't change anything with the taste, it just was easier for me, cus it's more familiar. :) I didn't do anything different with the ingredients other than using stock and tried the spicy V8, since it was such a small amount, really, and it was fantastic! :) Oh, and I chopped the spinach. I loved the dill in it, too...Great recipe, an easy 5 from me. :)

Delicious. It was perfect for us for breakfast, as we aren't generally sweet eaters, ever, let alone in the morning. The only change I made was to use a bit of salsa in place of the tomato because I couldn't find any fresh tomatoes I wanted to buy, and ours aren't here, yet! :) Thanks for a very good keeper breakfast recipe! :)

Blackened Salsa Tilapia

This was a hit. I made my own blackening blend (VERY hot with cayenne, white, green and black peppercorns, sea salt, basil, thyme, chives, paprika and brown sugar), and used my homemade salsa. I doubled the fish and everything else but the butter...if I make it with 4, I'd prolly be plenty fine with 4T of butter in both the sauce and the pan for the fish...and I LOVE butter! :) My salsa sauce was thick, and the slotted spoon didn't help...I could have thinned it out a bit more, but since the flavor was great, I didn't bother. :) I served it with a chick pea salad and rice, too. :) Thank you for a delicious, easy recipe.

Mediterranean Chicken and Orzo Salad In Red Pepper Cups

Made this for the Recipe Swap, flower girl, and it was great. :) I used kalamata olives and my own cherry tomatoes, quartered, cus that's what I had, and a grilled chicken breast left over from the night before.(had been basted while grilling with lime/butter), and I used fresh herbs. :) Made a gorgeous presentation in the peppers, too. Added my photo til you take one of your own! :)

Fried Green Potatoes...not tomatoes

Made these for Recipe Swap, and served them with an Apple Dijon Pork Roast I did in the slow cooker...it's a football day, which means snacks all day, so didn't serve anything else with it. Just the roast with it's mushrooms and carrots, and these, topped with a lil sour cream and chives. They were excellent! :) I used 5 pieces of bacon(had exactly that many left over, so used 'em all), and green onions because I had some I wanted to use. So, I did the bacon, added the onion and spinach together(with a touch of butter, just cus I'm southern ;), then the taters seasoned with salt and pepper. I used my cast iron, and that really put a nice crust on these. :) They'd be fantastic for a breakfast or brunch, too. Thanks for the recipe, Lillian! :)

Made this for a light dinner for myself, and it was delicious. I used smoked Mozzarella, because that's what I had, fresh basil and fresh tomatoes and onions, as directed. I didn't over stuff my sandwich on purpose, because I actually love the taste of the bread, too! :) Wouldn't change a thing, but a lil Parmesan would be good freshly grated over the olive oil just before grilling, I think. I grilled these as I do all my "panini" style sammiches...on my cast iron grill pan, with my bacon press. :) Thanks, Mrs W, for a nice light, but full of flavor, dish! :)

Savory Cheddar Zucchini Muffins

Let me start by saying I was somewhat prepared for a problem with this recipe only because of reading about some issues on the exchange...and, had that happened, I would have rated/reviewed the recipe to reflect that, no matter who the submitter was. Now, all that said, they were perfect! Seriously, I can't figure out what went wrong with those who had a problem. I am adamant about making a recipe nearly to the letter of how it's submitted in order to rate it fairly, and this was no different. I followed the recipe exactly other than I added a dash of cayenne and black pepper. There were no issues of saltiness, and they certainly weren't over OR underdone. They were lovely both in taste and texture. I am so glad I made these as a "test". Now, I will be making them again because they disappeared so quickly, this time! :) Oh, some of us did add a lil butter to these, while warm...mmmmmm....! Thank you for the recipe, Pam! :)

Easy Greek Yogurt Cucumber Sauce

This was fantastic for us. We had it with my own recipes for Souvlaki and Greek Fries one night, then I polished off nearly the rest of it with just lightly toasted pita bread the next day. It was even better by the 3rd day when I finished it. :) I grated my cucumber and loved the texture that made, so will probably do that every time. This will be made over and over. Thanks sis! :)

Roast Beef Stuffed Shells

Made these for lunch, and they were tasty. I made my own gravy(beef/mushroom), since that's what the submitter orginally intended, but it was removed from the final posting, and I used cojack on top...very good. If I served them for dinner, I'd prolly just add a simple salad, as they are quite rich and filling.

Maple-Bacon Chocolate Chip Cookies

Okay, let me first say that the only real issue I had with this recipe didn't involve the bacon! :) It was something like eating a chocolate chip pancake with syrup and a side of bacon. I wasn't put off by it, at all. Just make sure to cook the bacon crisp, crumble and drain well. However, I had to add more flour to this recipe. There isn't a high enough chip/dough ratio as written, to help hold the dough(only I used a mix of white and milk chocolate chips) and my first batch spread so much they LOOKED like the aforementioned pancakes. :) So, I just added another 1/4 cup flour, remixed and refrigerated it for a bit. The rest of the cookies were fine. Even though, as written, these just weren't the right consistency, I'm still giving it a 4 because the flavor which, to be honest, is likely what most folks will question, was good. A very rich cookie with a fun "don't tell them" ingredient. :)

Refreshing Summer Orzo Salad

Okay, made this this afternoon, made myself not eat it for lunch, and had it with sanzoe's Caramelized Garlic Chicken....very good together! :) I followed the recipe exactly, but for guessing a bit on the capers(cus I only have a huge jar ;), and I didn't have basil feta, so I used plain, I didn't chop my spinach and I used fresh herbs, cus I had them. None of the changes were significant enough to change the taste or texture of the dish, so I still feel fair in rating it high. :) Those herbs cooking with the pine nuts, garlic, pepper and oil smelled SOO good! :) So, this is a very original recipe, and I'm so glad to have tried it! :)

Not that you need ANOTHER 5 stars to convince yourself to try this, but I'm giving it,anyway! :) This is wonderful. I used small shrimp and topped with Italian blend cheese and broiled in the oven in my cast iron. A huge hit and a great appetizer to our steak dinner. Thanks, ambi!

Garlic and Herb Cream Cheese

This was pretty good, and is a good base idea. Like others, I'd cut the butter by up to half. The oregano was just too much for me, too, so I'd leave that out next time, and increase the dill a bit. I didn't mind the dry herbs, just the strong oregano flavor. It would also be good with goat cheese rather than cream cheese. We ate it as a snack on bagels! N*R
