Ginger-Orange Squash

This was very good. I didn't have OJ concentrate, so I used 3 tablespoons of regular OJ. I also baked the squash in the oven on 350 for 50 minutes.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Fantabulous. Also great with chocolate cake mix, but it does not work with brownie mix. Baking for 16 (or 17) minutes works well - you'll think it's underdone, but it's not. Really good also with vanilla icing. It helps if, after the dough is frozen, to reshape them into actual balls and put back in the freezer for a bit. I also refrigerated mine after baking. I don't know if it's necessary, but it just seemed right to get it to congeal and be more cookie-dough like. Great recipe!

Quick Coffee Cake

Very good taste, quick & easy. I also doubled sugar as people suggested, and mixed the melted butter with the topping. Yummy, and I found that unlike most baked goods, it was actually better once cooled. I got nervous that when I poured the batter in it looked like a very thin layer, but it rises when cooked, and turns out substantial.

Pumpkin Cream Cheese Muffins

Excellent muffins - very rich & filling. For the muffins I did half white sugar and half brown sugar, and I found the consistency to be perfect. I also couldn't get the cream cheese to be a filling (it just ended up on top) but it was very good. I added a half teaspoon of cloves to the batter - yummy. The recipe can definitely be stretched to make 24 muffins, but I divided the batter among the 18 muffins and ended up with full, big muffins. A definite repeat!

Strawberry Soup I

Excellent recipe! I told my husband about someone's great suggested idea of freezing the leftovers into popsicles, and he said, "why would they have any leftovers??" A big hit. I didn't have any cardamom so I used a mixture of cinnamon and nutmeg and it was still great. Next time I make this, I'd love to use some chopped fresh mint as a garnish, or blend a few leaves right in. A definite repeat!

Pesto Sauce

This was good, but way too garlic-y, like others have mentioned. I reduced the cloves down to 3, but next time I'd do 2 or even just one clove. I walked around with nasty breath for the rest of the day, but it did taste pretty good!

Cranberry Nut Pie

This recipe was very yummy. I did make some adjustements - the amount of cranberries just didn't seem like enough, so I put in an additional half cup, and doubled the amount of walnuts, too. A dessert to me isn't dessert without chocolate, so I added almost a half cup of chocolate chips. It was hard to get the pieces to stay together when warm, but it came out delicious!

Pecan-Oatmeal Pancakes

These pancakes were amazing! Even my husband (who is scared of anything besides plain pancakes) loved them! I served them with bananas and strawberries on top and felt like I was in a bed-and-breakfast. Very easy to make, too.
