Crispy Potato Pancakes
I left out the onions (not a big fan of them) and it still tasted great. A little greasy in the morning, but perfect with ketchup! I could really taste the garlic in them too, but it was fine. I loved the crispyness! :)

Chicken Zucchini Casserole
Wonderful!!! I didn't use the onions in this recipe (not a big fan). I also added peas to this casserole, and crushed saltine crackers for a crunchier topping! Leftovers were great too, this turned out to be a big casserole!

Absolute Mexican Cornbread
Big hit at our Cinco de Mayo party. I loved it, friends loved it, and I can't wait to serve this at any family gathering!
