Potato Pancakes II

Reviewed: Feb. 11, 2012
Delicious! I took the advice of another reviewer and added a 1/3 cup of flour, other than that I followed the directions exactly. I found that 5 minutes on each side was a little too long, so on my second batch I only cooked them for 4 minutes on each side and they were golden and perfect. Will definitely make again! What a great way to use left over mashed potatoes!

Pat's Cream of Potato Soup

Reviewed: Dec. 31, 2011
We thought this was just OK. It had a very strong chicken taste to it from all the broth. Nex time I will play around with spices to get it to my liking. Late in the week, I blended the soup to make mashed potatoes. I love dishes with a dual purpose!

Plum Bread

Very good! I followed the cake recipe exactly. I left off the glaze. We thought the cake was good as is. I want to try it again with subbing applesauce for the oil.

Lime Strawberry Surprise

Reviewed: Dec. 31, 2011
Looks amazing, tastes terrible. After coaxing my guests to try it after they found out there was mayo in it, no one liked it. Sadly, I threw about 95% of it away. I think I may try this again, but do a totally different center. Maybe cream cheese and cool whip would've been better.

Easiest Peanut Butter Fudge

So good, and super easy just like the title says! My only complaint is that it doesn't slice very easy. Maybe with some tweaking, it could work.

Campbell's Kitchen Creamy Chicken Enchiladas

Reviewed: Jul. 31, 2011
Incredibly fast, easy and delicious. The only thing I didn't do was to make the extra topping to go on top of the enchiladas. I mixed the soup, sour cream, picante, chili powder together and used that for the topping and the filling. I kept the chicken separate from the sauce and put about 2 tbsp of cubed chicken and 1/4 cup of filling inside each one. It was the perfect amount. I also added a little cheese inside each enchilada.

Golden Chicken Casserole

This didn't taste exactly like take out chinese, but it fit the bill for what I was looking for. I took the advice of other reviewers and added soy sauce and pineapple juice. Served it with white rice. Will make again.

Baked Lemon Chicken

Reviewed: Apr. 3, 2011
After just leaving a weight watchers meeting, I didn't think they'd be too impressed by my cooking chicken in a rich, buttery sauce. I opted to use egg whites in place of butter and added lemon juice to that. I used garlic powder instead of minced garlic, and added a little lemon pepper. Although the chicken was tasty, you could hardly taste lemon in it.

Turkey and Hash Brown Casserole

Reviewed: Mar. 29, 2011
I took A LOT of shortcuts with this recipe. I browned the turkey without the oil and while that was cooking, I microwaved the broccoli according to the directions. I mixed 2 whole cans of cream of mushroom soup with 1/2 cup of milk and doubled the garlic powder and pepper. I omitted the onion-not a fan. Once the turkey and broccoli was done, I combined it with the soup mixture and dumped in 2 drained cans of diced potatoes. Once this all of this was mixed, I put it in the oven for 25 minutes and it was delicious. Will definitely make again. Next time I may add a little sourcream for some zip!

Lemon Cream Pasta with Chicken

Reviewed: Mar. 28, 2011
This was so good! Who knew pasta with a cream sauce could taste so light and fresh! The lemon flavor was very prominent and tasted delicious. I used reduced sodium chicken broth instead of regular. When it was all cooked, I tasted it and it seemed like it needed something so I topped it with a sprinkle of parmesean cheese and that really put the finishing touch on.

Slow Cooker Pulled Pork

Reviewed: Mar. 26, 2011
The best bbq I've ever had! This was my first attempt at making it and I'm in love! I bought a 4 lb pork tenderloin on sale for $6. I used half for another meal, and half for this bbq. I used montgomery inn bbq sauce and added a little garlic powder. I thought it needed something to balance the sweetness from the rootbeer and bbq sauce.

Buffalo Chicken Burgers with Blue Cheese Dressing

Reviewed: Mar. 20, 2011
So good! These were my first attempt at making a chicken burger and I was very impressed. I did't make the blue cheese sauce as we don't care for it and I had to make them in a skillet instead of on the grill. I followed the recipe exactly and can't wait to make them again. Tender, juicy, and a bonus-they're healthy! Thanks for a superb recipe!

Baked Ziti III

This was just OK. I thought the addition of sourcream took away from the "Italianess" of the dish. I love ziti but won't be making it this way again.

Colossal Caramel Apple Trifle

Reviewed: Feb. 21, 2011
Everyone that ate this raved about it. I used a cinnamon cake rather than the yellow, but I'm sure it would be great either way. Instead of cutting my cake into squares, I simply crumbled half the cake for the first cake layer and then crumbled the rest for the second. I poured the caramel right on top and mixed together. Delish!

Lemon Pepper Cod

This was great fish. I didn't not have a lemon so I used lemon juice. I used distributed 1 tbsp per piece of fish on each side. I also used olive oil instead of vegetable. Will definitely make again.

Simple Beef Stroganoff

The taste of the beef was OK, but when added to the noodles, it became extremely bland. Seems like something should be done to bump of the flavor of the noodles as well.

Tender Chicken Nuggets

Reviewed: Jan. 17, 2011
Very good. I made these for my 2 year old daughter who pretty much lives on chicken nuggets. I wanted a healthy alternative to store bought ones. I followed the directions exactly. I did take another reviewer's advice and pat the nuggets dry before dipping them and sprayed the tops of them with cooking spray. I flipped them over after 7 minutes to make for 14 minutes of cooking time.

Tater Tot Casserole

Reviewed: Jan. 8, 2011
I had to improvise a bit with this recipe. I didn't have tater tots so I used a can of diced potatoes and I used ground turkey instead of beef. I also threw in a bag of mixed veggies. I used both the ketchup and worcestershire sauce. I used about 1/2 tsp onion powder instead of real onion and I added 1 tsp garlic powder and 1 tsp seasoned salt. Topped with cheddar cheese and baked for about 20 minutes. Turned out great.
