Butternut Squash Soup II

Very easy and delicious.....added 4 oz. cream cheese at the end and put some Herbs de Province in.....great addition.....made it for lunch tomorrow for friends.

Asian Asparagus Salad with Pecans

Tweeked it quite a bit so it's not fair to say I didn't like THIS recipe. Do NOT marinate for 24 hrs. WAY, WAY too long....strong flavor. Used slivered almonds instead.....just okay for me...probably would not make again.

Pear Crumb Pie

This was delicious...BETTER than apple pie. I don't particulary care for pears but had 3 left over from the holidays that we got from Harry & David. Decided to try this and it was soo good. Served it w/vanilla ice cream. Also, changed the pie crust a bit...used 1/4 cup crisco and about 4 Tbs. of butter...came out amazing!!

Lemon Poppy Seed Biscotti

Was not crazy about these. I added fresh lemon juice as well as the lemon extract. There was too much poppy seeds as well. I found the dough to be flaky and it was hard to put it together so it didn't fell apart. It needed more liquid and that's when I added the fresh lemon juice. I also cooked it longer the second part of the baking. They were so boring that I frosted them with lemon frosting. Have had and made better. Will not make them again.

Butter Flaky Pie Crust

Needed a butter recipe b/c I was out of crisco and this was really good and flaky. Made a pecan pie out of it. Would definitely make again.

Delicious Ham and Potato Soup

It was very good AFTER I added additional ingredients to it otherwise it would have been a bit blah. I doubled the celery,onion and ham. I substituted the chicken bouillon with ham bouillon (squares) and added lots more salt, pepper, butter and dash of cayenne pepper.

Tiramisu Layer Cake

I doubled the coffee liquier in this recipe as well as the coffee and it still could have used a bit more moisture. It was very good but it needed to be a bit more moist. I made this 2 days before I served it so that all the flavors would blend. I would triple the coffee amounts and double or triple the liquier amounts too. I made chocolate covered leaves and put shaved chocolate on top. Very pretty.

Apricot Chicken I

Decided to make it for a group of 14 (after not making it for 25 yrs.) I am not a chicken eater. Everyone loved it. After 30 minutes I took the cover off and baked it like that so the chicken would crisp up a bit. I also take the excess skin off but leave some on it. You can use any parts of the chicken that you like. Very moist.

Irish Cream Bundt Cake

Actually pretty good.....you can definitely taste the irish cream....very moist and tasty. Loved the glaze on it - makes the cake so don't leave it out.

Sam's Famous Carrot Cake

Very moist and easy to make. I used the packaged buttermilk (which you add water to)and put cream cheese icing on it. Didn't last too long. I am not a lover of carrot cake, but this was exceptional.

Pineapple Mango Pie

Wonderful and so easy to make. I used fresh pineapple instead of canned and added an extra Tbs. of tapioca. Was not watery at all. I would recommend letting it sit for at least 1/2 day so the juices don't flow when you cut it. It needs to sit for a while. WOW!!! No wonder I love mango dishes!! Stored this recipe in my mailbox and will definitely make it again.

Cinnamon Hazelnut Biscotti

After making the dough, I refrigerated it for 30 minutes - it made it easier to work with the dough. I also doubled the cinnamon (2 tsp.) amount and baked it longer - made the 10 minute part about 15 minutes. The inside seemed too soggy at 10 minutes. I also dipped them in semi-sweet chocolate on one side. If you can get hazelnuts, by all means it does have a better taste. My friend came over for coffee this morning and raved about them. Would definitely make them again.
