Salmon with Tomatoes
This is a fantastic recipe! I was worried about taking a beautiful piece of fish and preparing it like this but it was wonderful. I did serve it over angel hair pasta, which was great. I feel bad about saying that I "tweaked" the recipe just a bit, but I did. It seemed that the salmon needed just a bit more sauce and so I added about 1/4 cup of dry white wine and about 1/2 cup of heavy cream. It was so delicious! Thank you for sharing the recipe.

Stuffed Pork Chops with Gorgonzola and Apple
I made this for dinner guests last night and was a little nervous that they might not like the strong flavor of the gorgonzola. But they thought it was fantastic and there wasn't a scrap left. The combination of the cheese and apples is wonderful and not overpowering in the least. I was confused about "reincorporating" the cheese but took it to mean that the cheese needed to be completely blended. Take time with the sauce. It does take a while to turn a darker brown but that really does contribute to the flavor. Thank you for this fantastic recipe!

Jalapeno Chicken II
This is so delicious! Don't be afraid of the jalapeno. We thought that it might be too spicy and so tired some with the jalapeno and some with a roasted poblano pepper. The flavor of the chicken with the jalapeno was much better and not overly hot. Just gives it a nice kick. They do take careful watching on the grill so that the bacon doesn't get overly crispy and hard before the chicken is done.
