Zucchini Bread IV

Recipe was great but i did add a little nutmeg and made the crunchy topping another reviewer suggested. The recipe for the topping was as follows: "The crunchy crust recipe is this: -1 cup brown sugar -1 cup all-purpose flour -2 tablespoons butter or margarine -2 teaspoons cinnamon -1/2 cup chopped walnuts. Mix it all together really well and crumble on top of the batter prior to baking." If you make the topping it calls for way to little butter to make the topping hold together - without about 4x the butter the topping will be powdery and simply fall off. I have also used this recipe as a base for banana bread and works fine for that as well. For a little twist I added 12 oz of milk chocolate chips to the loaves - wasn't overpowering but left a hint of sweetness and chocolate.

Chocolate Sauce

Agree with other posters it is way too thin esp without the milk. The other thing to be mindful of is pick a good quality cocoa powder and make sure the taste compliments the dish. After using it for the desert we saved the syrup and used it to make hot chocolate that was a step above 90% of hot cocoa mixes.

Sweetened Whipped Cream

Good basic recipe - nothing spectacular but solid. Add sugar to taste but keep in mind what you are putting it on.

Asian Lettuce Wraps

Made this after having it at a very popular asian restaurant... couldn't tell the difference. One thing I changed was instead of ground beef I substituted half ground beef and half ground pork which I am told is a little more traditional in this dish.

Szechwan Shrimp

This was a very easy meal to prepare and as has been written don't let the ingredients fool you. The only things i changed were adding a few splashes of fish sauce and more red pepper.

Spicy Basil Chicken

Excellent dish. Added chopped cilantro (about a 1/4 cup) and the lime juice from 1/4 wedge of lime. Didn't have peppers so I added a little dried red pepper flakes and used dried basil instead of fresh. ONE WORD OF CAUTION - if you arent used to using the hot chili oil when you add the chicken it may atomize and/or smoke a bit in the kitchen and cause some breathing irritation. I made this in the fire station and cleared the kitchen with everyone coughing. Our ventilation fan does not keep up with the smoke/vapor production.

Triple Berry Crisp

Great and easy recipe. works well with frozen or fresh berries. Only thing I would (and have) changed is to increase topping amounts by 50% so instead of 2 cups oats and flour i use 3 - adjusting the spices accordingly.

Thai Pineapple Chicken Curry

If you like spicy curry you will need to add some chili oil or other heat. Tried dish with both regular and lite coconut milk but lite didn't have the right consistency. Half and half worked out fine though.

Easy Meatloaf

We had high expectations based on the reviews but were very disapointed. We will not make this again as we have used much better recipes. If I were to make it again I would cut the onions by half, add worchester, maybe italian seasoning and increase the cooking time about 10-20 minutes. I think there are much better recipes that wouldn't require the same degree of adjustments.

Sukhothai Pad Thai

Outstanding recipe - very close to going out. Followed recipe very close but made changes that others suggested. Big ones are reduce oil to about half, add red pepper flakes and hot chili sauce to taste, and the biggest give rice noodles plenty of time to soak before begining to cook. Ours were still tough when placed in wok. Fixed this by adding about 1.5 cups of water and a lid and steamed noodles soft but I think they would've been better if they'd just soaked longer.
