Quick and Easy Tuna Casserole
My husband does not like tuna OR peas, so whenever he goes out of town on business, I make something using both, for my kids and I. I was very pleased with this recipe! Pretty simple to put together and I LOVED the fact that it was done quickly and with a stockpot instead of a casserole dish in the oven. (Living in Oklahoma, I look for dishes I can make on the stovetop in the summertime, instead of using the oven.) Because I wanted it to be kid-friendly, I only used 2 T. of finely chopped onion. (I threw the rest of the onion I chopped up in the freezer for another day.) I only used 5 slices of American, but then grated in the better half of a block of cheddar. I added one can of milk. I also used 2 C. mixed vegetables and could have used more! I topped it (right in the pot) with a mixture of a tad melted margarine and half a sleeve of crushed Ritz crackers. My 3 year old daughter unfortunately, is being difficult and won't taste it, but we'll see if I can get her to later tonight. My 10 month old son loved it! (I have been introducing more mashed table foods recently.) I did add generous pepper and a bit of salt to my own dish, but liked this so much I may even try and get the husband to eat it! I'm now trying to decide what perfect dessert I want to make to follow it. I'm thinking Coconut Custard Pie or Brownies!

Grandma's Sweet Slaw
I like Kentucky Fried Chicken's sweet cole slaw, so this is what I was looking for. I browsed a similar recipe on this site and it had lots of ingredients. It tempted me to add salt and pepper, plus a splash of vinegar and a splash of milk. In retrospect, I wish I'd just kept it simple and left it without the extra liquid. I will keep the salt and pepper though for next time. It did seem too sugary at first, but let it sit for a while, then test it. It did create a bit of "juice" after sitting. Fine with me though; just like the restaurant's. Sometime when I'm feeling healthy, I will try it with Splenda. I think it would be very good. I used a bag of preshredded slaw mix and can't wait to use this again for a SUPER QUICK, CHEAP and HEALTHY side this summer, no oven needed. I think we'll try it on top of pork burgers - YUM! Thanks!

Spiced Tea Mix
After reviewing a similar mix, I found this one. I was looking for a simple version of the spiced tea my mother used to make. This is PERFECT! (and simple) Thanks!!
