About this Cook
36 years old, training for my 2nd marathon, trying more vegetarian options in our diet
My favorite things to cook
Indian food, stir-fry with veggies, "pantry cooking" - always with a glass of red wine on the counter!
My favorite family cooking traditions
Turkey hash the day after Thanksgiving (mix of gravy, potatoes, turkey, stuffing, and green beans) - dense, but yummy!
My cooking triumphs
Comfortable enough with my cooking skills to alter most recipes to be more healthy, learning how to cook tofu, and homemade brunswick stew
My cooking tragedies
A really bad onion chicken (using Lipton's soup mix), and a terrible haddock ... every tragedy is a learning experience!

Aegean Chicken Salad
What a great way to make chicken salad! I don't like mayonnaise, so on the rare occasions when I make it, I use plain yogurt. It never occurred to me to use hummus to add flavor - delicious! I didn't have any lemon juice, and left out the olives -- but put it on a sandwich with cucumber, green pepper slices and spinach. Thanks so much for sharing the recipe - I'll definitely make this again!

Asian Ground Beef and Pepper Saute
This was surprisingly good - I was a bit skeptical, using ground beef in a stir-fry, but the flavor was great! I didn't have chili paste, so I used a thai garlic paste instead - yum! Like others, I used more liquid and spices, since ground beef tends to be pretty dry. Next time, I'll try it with broccoli and water chestnuts. All in all, an inventive way to use ground beef!

Peas and Celery
Interesting idea, but the celery added a strange smell to the dish - I love the lemon pepper, though. Will probably make this another time without celery ...
