Lemon Cream Cupcakes
Lovely light little cupcakes! To boost the lemon flavour, I rubbed the zest into the sugar before creaming the butter, and used lemon extract and juice instead of vanilla. I also added a bit of yellow food colouring for a brighter, sunshine-y look. The cakes turned out moist and soft with a layered lemon flavour. Delicious!

Pear Crumb Pie
Absolutely delicious, and easy too! With a pre-made crust and the crumb topping, this is a very quick dessert that looks like a lot of effort was required. My sister declared it "Pie-fect!" and said it was the best pie she's ever had. Great dessert for the fall season.

Pollo a la Crema
I was looking for something quick with a Mexican twist, and with a lot of extra additions, it made for a very enjoyable meal. I seasoned the chicken with cumin, cayenne, oregano, salt and pepper, and sauteed it with diced onion, bell peppers, and garlic. For heat, I added some jalapeno and chipotle peppers and sprinkled some fresh cilantro at the end. I also used milk instead of cream, and it worked just fine. It's a good weeknight meal that can be easily modified depending on what you feel like.
