The Best Meatballs

MMmmmmmmmmmmmmmmmmmmmmmmm!!!!! I used Turkey and turkey sausage combination of meat. THat is the only thing I changed, it was flavorful, tender, juicy and delicious!! This is going in the forever file! YUM!!!

Italian Biscotti

This was my first time making bicotti, and unfortunately I was a little disappointed. They were not hard and crunchy, s they did not soak up much coffee. The taste is good, but more like a shortbread, not like boscotti should taste. I would definately toast the almonds, they taste a little raw in the cookie. These are however, easy to make and are palatable. But I will keep looking for another recipe that really knocks our socks off.

Apple Carrot Muffins

Very Very good. Do yourself a favor and double the recipe. One batch will just get your family through the day. I did follow a couple of the recommendations made by others, no big changes. I used 1/2c Brown sugar and 1/4c honey in lieu of the white sugar and I did not have buttermilk on hand so I used Evaporated milk in the same amount. It was delicious! The batter was very wet and that worried me, but it turned out wonderful! If you like big chunks of apple, do not shred your apples, rather cut the flesh off the core and dice them in to .5 inch chunks. They soften nicely and give a bit of apple pie texture to your muffin. This is going in my forever box!! Thanks for the recipe!

Spinach Quiche

I have made this about a dozen times over the last year at least, maybe more. I always get rave reviews. The only change I have ever made was that I use regular plain feta instead of the flavored one, it really lets the mushroom and spinach shine through. Yes, this recipe is so forgiving, I think you could add just about anything and it would be great. Really a 5 star recipe. Quick and easy too!

Fresh Cherry Crisp

Really good. I used regular bing cherries and used only 3/4 cup sugar and it was still great. I may even reduce to 1/2cup next time. Makes a lot of crisp, I could have used another cup or so of cherries for the fruit part. First time making a cherry anything. Hulling them was really a labor of love, but worth it. If you have a convection oven, turn down the heat and start checking for doneness about 15minutes ahead of time.

Chicken and Biscuit Casserole

YUMMMMMM! It was great just as is! Push the biscuit dough just below the "gravy" so that the tops do not burn and they come out all soft and steamy. Delicious!

Extreme Banana Nut Bread 'EBNB'

Oh My Goodness! Ok, it took trying about 6 recipes from various websites and THIS IS THE ONE!! Stop the bus, this gal got it right! Only variation I made was to add a little extra bananna by accident, but it worked out great.Also, I added 2/3C sour cream. I do this to all of my quick breads and it makes them sooooo moist. Oh so bananna-y yumalicious bread! Thanks for the winner!*dont use margarine, go for the butter*

Juiciest Hamburgers Ever

Ok, first off I used lean turkey meat and I followed the recommendations of others to use 1T Sour Cream and 2T regular milk instead of the Evaporated milk. Everything else was as written in recipe and WOWOWOWOWOWOWOWOWOW!!!! Man, party in your mouth. THis is my new fave burger and I am not even a turkey burger lover. (I used turkey for the guests I was serving) Top this with a slice of Havarti or other white cheese and toast your buns on the grill. This is going in the forever box! Juicy, so juicy I did not think it would hold up well on the grill, but it did. Cook turkey burgers slow, helps them stay moist. Turkey does not tolerate a hot fast sear like beef does. Mmmmmm I am still full and just talking about it makes my mouth water for leftovers tomorrow. Thanks for the simple yet surprisingly yummy recipe. *Does not taste like meatloaf at all, in my opinion.

Pepperoncini Beef

This was ok. Nothing to go nuts over. I followed the directions with only one small exception. I only used half the pepperoncini's called for. It was still pretty spicy. My only tip is that I thought for sure there was not going to be enough liquid in the crock pot during cooking so I added a bit of stock and it ended up being too much liquid. Dont make my mistake. Only reason I am giving it three stars is because even though this was good, I have had many that were even better.

Baked Tofu Bites

I liked these. THey are nice and low cal. The marinade sounded strange, but is really quite tasty, however I omitted the hickory smoke flavor. I feel it is really important that you dry out the tofu as much as you can before marinading them. This is easy to do by lining the sheetpan you are going to use to cook them with a folded towel (paper towels are not absorbent enough unless you use a lot of them) then place the tofu down and top with another folded tea towel. Place a cutting board ontop of this and finally top with a heavy frying pan or (I used my food processor, very heavy but effective) something with some heft. Let sit for at least 15 minutes, longer the better. Then when they do go into the marinade, 5 minutes is not nearly long enough. I did it for an hour at room temp and found even that to still be a bit short. The longer you have the better it will penetrate and taste on the tofu. I will def make this again. Safe to leave out at room temp on the counter all day to snack. Once they are refrigerated they lose something, in my opinion.

Souvlaki

My family thought this was awesome. It is such a simple marinade, yet so flavorful. Will definately surprise you. I think the trick is to let the meat come to room temperature in the marinade on the counter for at least one hour before you grill it. Ooh it makes the marinade permeate the meat so much deeper and the flavor is throughout the meat instead of just on the surface, especialy with chicken which is very hard to flavor through. I added about 2 lemons worth of juice instead of just one and it reminds us of our favorite greek restaurant in town. DEEELICIOUS!!! *We serve this with Greek Feta fries. Steak fries on a plate, take 2 cloves of crushed fresh garlic, mix with a tablespoon of lemon juice and sprinkle all over hot fries. Then sprinkle about 1/2 (or more if you like) of crumbled Feta and sprinkle with dried Oregano, salt and pepper. YUMMMM!

Banana Crumb Muffins

These were pretty good. I felt that the topping was way to greasy and it slid right off the muffins all over the muffin tray. I would add a bit of flour and maybe less butter? The muffins themselves seemed as if they had too much rising agent, they were too "holey" and it seemed to dry them out. (sorry, not a baker, do not know the technical terms) But the taste was of course bannana-ish enough, but I wanted more banana flavor and a more muffin like texture. I was honestly surprised after all the good reviews. Maybe it was just my baking. Probably will not make again.

Split Pea Soup

YUMYUMYUMYUM!!! This was my first attemt at split pea and boy was it good!! I had a ham bone with lots of meat left on it from last weekend and I did make a few changes. But that is what is great about this recipe, you can change it up and it will always taste great because it is just a good foundational recipe. I was going to be gone all day so I threw all of my ingredients in the crock pot and (No I did not soak the peas, big mistake, my house is a smelly war zone tonight. SO definately soak if you dont want the gas by product) I added everything but the celery and I only used 2 potatoes, I like more of just the peas. It was perfect. I cooked it on high for 7-8 hours and it was great!! Try this one!

Chocolate Zucchini Bread I

Very good taste. It was a little on the dry side, however that may have to do with the fact that I have a convection oven and I have learned that they run a bit hotter and cook a bit faster. I did add 1/4 cup of baking cocoa to the mix because I could tell by the batter it would not be chocolatey enough, I am glad I did. Definately coat your choco chips in flour before you add them to the batter and if you have a convection oven like me, do not cook them longer than 50 minutes and start poking for doneness around 45 minutes. By the time the top looks crusty and cracks, it's too late. But as far as taste, very good, not overly sweet. I will definately give another try.

Chocolate Chip Orange Zucchini Bread

This has a wonderful flavor, but I suggest using 2T of orange zest instead of one. One T barely gives an orange flavor at all in my experience. I used one stick of meted butter and one 1/2 cup of oil instead of all oil. This is probably why mine was not as moist as I would like it. I will use the full cup next time. If you have a convection oven, you probably already know this, but just in case, definately reduce the temperature 15 degrees and only cook for 45 minutes. The taste is fantastic without being to overly sweet or cake like. Made two beautiful loaves. I will definately make this again. Bravo.

Three Cheese Garlic Scalloped Potatoes

I was so embarassed! This recipe is all I had to bring to easter dinner and I followed it to a "T". It was a soupy mess with a butter slick along the top. THe cheese all curdled and was grainy. I Finally got a ladle and spooned out about 2 cups of liquid, returned it to the oven for yet another 30min. and it was still a goopy mess. This was not worth it, I am going back to the box!

Famous Pork Chops

Was pleasantly surprised at how tender and juicy these stayed in the oven. Followed recipe exactly except I added much more garlic and season salt to the cracker mixture, and I was glad I did. I found that for four pork chops, 2 eggs for the wash was plenty(luckily, because that was all I had). Also, before I put them in the oven I generously sprinkled Parmesano Reggiano all over the top. THis added extra crispness and flavor. These are going into my regular rotation. Even my young 3 and 6 year old ate them, and they never eat pork. Only reason I am not giving this 5 stars is because I reserve those for recipes that are really extraordinary.

Hummus III

I know this already has plenty of reviews, but I was SO impressed that I had to add one too. I usually hate most store bought hummus, they are too tangy and almost funky to me. This was awesome! It really can be customized. I added 5 cloves of garlic and used only 3T of lemon juice. It was fantastic. You can customize it anyway you want. Just think of the possibilities. Roasted red pepper, or roast the garlic first, or add cumin and use pinto beans to slather on nachos or a tortilla. It is endless! Thanks for the great recipe.

Mrs. Sigg's Peanut Butter Cookies

OMG! This is the best peanut butter cookie I have ever had. Pull them out at 8 minutes, they are done. Add 1 cup of Peanut butter as per everyones saying, it is a good thing!!!

Chewy Chocolate Chip Oatmeal Cookies

I am only giving this three stars because I do not think that oatmeal and chocolate chip go together. I will stick with oatmeal cinnamon raisin. A match made in heaven. Also, this cookie was on the dry crumbly side, I would recommend using a little less oats. Otherwise palatable. We did eat them all.
