I love Grilling Fish!

So I've started playing with fish much more frequently.  My favorite one is HANDS DOWN the yellow fin tuna steaks.  After that I really like swordfish and am starting to like salmon if its done the right way.

Yesterday I decided to do a mongolian garlic style marinade for some grilled swordfish steaks:
Blend the following to a puree in the food processor:
  8 cloves garlic
  1/2 med onion (quartered) (might sub this w/ scallions next time)
  1/2 red pepper (de-seeded & quartered)
  1/4c evoo
  1/4c dry white wine
  2T ketchup
  2T paprika
  1t Kosher Salt
  1/4t black pepper

  1 whole chipotle pepper (optional but I love it, could replace the red pepper w/ a couple of these)
mix into this w/ out emulsifying it 1/4c of chopped cilantro

Lightly score the top of your fish and cover in marinade (rub it in a bit) then let rest refrigerated for 2~4hrs.  Grill according to thickness turning only once on high heat.  For my ~1" steaks this was ~5min per side.
I served this with some Quinoa (1st time) under a basic prep tossed w/ some red chili paste, evoo, & lime juice.

The results were delish!  Of course I forgot pictures again.
For those looking for an Asian inspired marinade try this one from the food network.  One of my favorites!

Chuck, this sounds absolutely terrific! I'll have to try it next time I grill fish. Have you tried it with other fish, & in fillet form? What is salmon "done the right way" to you? My family's #1 favorite way to grill salmon (& most fish & steaks) is the Brazilian way. Hey Chuck! First blog I've ever responded to, since we don't have a private message feature! :) I just wanted to say, again, that I hope you're doin' well...and better every day! :) ...also, for the fish...I just made a great "crispy" grilled salmon from one of our AR pals...salmon is probably my favorite fish, though I enjoy most that I've tried, so far! :) Anyway, if you want that recipe, any other ideas or opinions about other ways to do fish, or just need an anonymous ear, give me a holler...my email's in my profile.
