Crazy Cake

Wonderfully easy, cheap, and tasted great. I used a good quality cocoa and increased it by a few T, and mixed it in a bowl instead of the pan (I don't think I'm that coordinated).

Different Pizza

I tried the crust only as well, which was nice and very easy. There was way too much milk, however, so I added quite a bit more flour. Like a biscuit, but not greasy/flaky. Thought about trying some yeast or nutritional yeast to get that traditional flavor.

Polenta

I've made polenta all my life and have never had it take that long to cook -- usually only a few minutes before it thickens up. It helps eliminate lumps if you mix your cornmeal to a cup of cold water, then add that to boiling water. Great with pesto, tomato and sausage.

Italian Summer Squash Polenta Bake

Since I find the idea of buying polenta in a tube absolutely unconscionable(you're paying how much for cornmeal and water??), I spent the 30 seconds to make my own and refrigerated it before slicing. The dish turned out very well. I added a bit more spaghetti sauce, and used whatever hard cheeses I had in the fridge mixed with mozzarella.

Pumpkin Raisin Scones

These are definately a good, low fat muffin (does not mean low-cal!). I halved the recipe and baked them about 10 minutes extra in a muffin pan and they were still quite moist. The applesauce flavor was a little stronger than the actual pumpkin, but very good.

Lentil Soup

Fantastic! Tastes great with a hearty bread or brown rice. I used chicken broth and a little less vinegar. It also helps to soak the lentils for a few minutes so they cook faster.

Fried Mozzarella Cheese Sticks

Wonderful -- I also double-breaded and cut my sticks in half as suggested in other reviews. Some cheese leaked through at the ends, but it didn't bother me.

Hamburger Buns

They came out too soft for me-- they actually started to fall apart when I tried to cut them in half and put a burger in them. Otherwise it was very easy and fool-proof recipe. Tasted darned good too

Sweet Russian Cabbage Soup

This was fantastic, but I thought there was way too much vinegar. Probably will depend on your tastes and the strength of the vinegar. Will definately try it again!
