Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 26, 2009
Delicious! I made as indicated except omitted the liver and used canned chicken stock. Baked in the oven at 375 degrees for 40 minutes covered, then uncovered for 15 minutes. I made 1 1/2 batches and used 1 1/2 cans of stock. Also used fresh herbs (twice the amount of dried) and sage flavored pork sausage as others suggested.

Chocolate Eclair Cake

Reviewed: Oct. 6, 2009
Good for a crowd. I made one low sugar version (sugar free pudding and low sugar fudge sauce, bottled) and one regular. For the glaze, I used powdered sugar in place of granulated and it was much smoother. I also used regular graham crackers, not chocolate.

To Die For Blueberry Muffins

I used a whole pint (2 cups) of blueberries and the recipe made 12 beautiful, moist muffins.

Pat's Baked Beans

Great recipe! I didn't use the garbanzos but used more pinto beans instead. Great flavor and I loved the different textures and flavors of the beans.

German Apple Cake I

Reviewed: Dec. 16, 2008
This is excellent. I made with granny smith apples. It was different than I thought it would be: there were many apple chunks with dough barely binding them together. I guess this is why this is do moist, flavorful, and apple-tasting. My kids loved it! I can see that it would probably be soggy after one day, but mine didn't last that long!

Raspberry Pie I

Reviewed: Dec. 1, 2008
I used raspberries that I had frozen over the summer. I thawed them, mixed with the cornstarch, sugar, and tapioca, and poured it into the crust. I didn't add any water. It was the perfect consistency and tartness. Thanks!

Slow Cooker Chicken and Dumplings

Reviewed: Nov. 23, 2008
Excellent and easy. Tastes homemade. I used 1 can each cream of chicken and mushroom because that is what I had. Also added a can of chicken broth instead of the water per reviewer's suggestions. The only seasoning I used was 1/2 t. poultry seasoning. Cut 1 can Grands buttermilk biscuits in quarters and added 1 1/2 hours before done (5 hours total on high). Comfort food at its best. Next time, I'll add a couple more chicken breasts.

Taco Seasoning I

Reviewed: Nov. 22, 2008
Made as indicated except I used cayenne for the pepper flakes and Montreal Steak seasoning for the salt and pepper. I put the whole thing in with 1 1/4 lbs. browned hamburger and 8 oz. of tomato sauce.

Raspberry Walnut Baked Brie

Made this with raspberry jam and sliced almonds and wrapped in crescent roll dough (what I had). It was great and had a good contrast of textures.

Chocolate Eclair Dessert

Reviewed: Nov. 4, 2008
This is excellent and easy for a crowd. I made 3 of these for a church function. Made one sugar free for the diabetics and dieters and it was just as good. I followed the frosting given in the most popular review but had trouble (I was using an electric skillet vs. burner). The sugar made the frosting too grainy so I started over and used powdered sugar. Success! Nice, smooth frosting and better tasting than canned frosting. Next time, I think I may try it with chocolate graham crackers.

Super-Delicious Zuppa Toscana

Excellent and easy. Bacon is optional, in my opinion. This is best made with kale if you're going to "hold" it because kale maintains a better texture.

Weekend Brunch Casserole

I made 4 of these for a church function and they turned out great. Definitely prebake the crust so it doesn't get soggy. It's easiest to cut into squares with a pizza cutter.

Charley's Slow Cooker Mexican Style Meat

Reviewed: Sep. 25, 2008
Excellent and so easy. I omitted the cayenne, used 3 pressed cloves of garlic, 1/2 tsp. cumin, and only 6 T. of Louisiana hot sauce. It comes out spicy but not overly so. I actually think this tastes better the second day, and it freezes beautifully. Oh, I also used the McCormick Montreal Steak Seasoning instead of the salt and pepper since that is basically coarsely ground salt, pepper, and garlic.

We LOVE this recipe. My father-in-law gave us the recipe, and it is outstanding. We do cut the salt down, though. Leftovers are equally amazing.

Banana Cake X

Reviewed: Sep. 7, 2008
Nice and fluffy. I used buttermilk instead of the milk/lemon juice and a yellow cake mix because it was what I had on hand. I also used 3 bananas. I made a caramel icing but think it would be better with a cream cheese frosting.

Fantastic flavors. I roasted the peppers and also added marinated artichoke hearts. I used corkscrew pasta and cherry tomatoes. The asiago cheese is a must!

These were okay but seemed to be missing something. More cake-like than chewy. I would probably cut down to 2 eggs next time. Not my favorite.

Company Couscous

Reviewed: Aug. 14, 2008
Very good, healthy, and quick. I cut the cherry tomatoes in halves and mixed extra parmesan into the couscous as well as added it on top. I'm not sure why you need to bake it; I think it could probably go right from the stovetop to the table. I also cooked the couscous in chicken broth and think that next time I would add a little italian seasoning.
