Sauteed Apples

These are great. They remind me of the apples from Cracker Barrell. I did add more cinnamon as I like the flavor.

Unbelievable Chicken

OH MY GOSH!!!!! My husband loved this recipe. He NEVER eats skinless, boneless chicken breasts but now he will. He tasted it and said this would be a great recipe to make for company. I made exactly as is and it turned out absoluately, positively wonderful!

In the past my husband would only eat fresh fish he caught. Well, I bought some salmon and made this recipe and he loved it. The only change is that I did not add the giner root - did not have it on hand but will probably not use it in the future either as it was great the way I made it.

Scallops Mascarpone

This is excellent. I could not get mascarpone cheese and mixed the following as recommended by a recipe elsewhere on this site - mix 1-8 oz cream cheese with 1/4 c. heavy cream and 2T butter. This works well in place of the mascarpone. I also added a diced onion with the mushrooms and left out the onion powder. I used broccoli instead of asparagus due to the time of year. This is really good!

This is excellent with the changes I made. I used frozen strawberries instead of ice cubes. Also used 3 T. lime juice instead of 1/3 cup.

Key Lime Pie VII

THIS IS EXCELLENT. I USED FAT FREE CONDENSED MILK. NEXT TIME WOULD USE 1 CUP KEY LIME JUICE. ALSO, BAKED 20-25 MINUTES (IT NEVER DID BUBBLE BUT WAS PERFECT). THE LIME ZEST IS A "MUST".

Tomato Salsa

I USED REGULAR TOMATOES AS I HAD AN ABUNDANCE IN MY GARDEN. I PICKED THE ONES THAT WERE BARELY RIPE SO THEY WOULD NOT COOK UP. I ONLY USED 2 STALKS CELERY. I DID NOT PRECOOK VEGGIES. I LET THE TOMATOES DRAIN IN COLANDER WHILE CHOPPING VEGETABLES AND THEN MIXED EVERYTHING IN LARGE POT AND BROUGHT TO BOIL. I POURED OFF MOST OF THE JUICE - LEFT JUST ENOUGH TO KEEP MIXTURE MOIST. THEN PUT THE MIXTURE IN HEATED JARS , SEALED TOPS, TURNED UPSIDE DOWN FOR 7 MINUTES. I THEN TURNED THEM OVER AND YOU WILL HEAR THE TOPS BEGIN TO POP WITHIN A FEW MINUTES (MEANING THEY WERE SEALED). NO NEED TO PRESSURE CAN.

A Good Easy Garlic Chicken

This was excellent!!!!!!! I did not have onion powder so I diced an onion and added it to the butter. When the chicken was done I turned the burner on high and browned each side. Wonderful!!!

This turned out great. I did not heat the sauce. I just mixed the ingredients together until the sugar dissolved and poured over the cucumbers which I peeled before slicing. I then let is marinate all day.

Barbequed Pork Ribs

These were fantastic. I only made 1 change. Instead of boiling the ribs I wrapped them in foil and baked them in 275 oven for 2 to 2-1/2 hours (until tender). These were the best ribs I have made.

Cucumber and Blue Cheese Salad

I did not care for this until I added 1/4 cup sugar and 1/4 cup canola oil. I made it without at first and it was way too tart for me. I then mixed the sugar and oil together and blended in the vegetable/vinegar mixture. It was really good with the change.

Stuffed Cabbage Rolls

THIS WAS GREAT WITH MY CHANGES. I MADE THE SAUCE USING 2 CANS TOMATO SAUCE, 1 CAN STEWED TOMATOES, 3 T. BROWN SUGAR, 1 T LEMON JUICE AND 1 TSP WORCESTERSHIRE SAUCE. I USED 1/2 LB. GROUND BEEF AND 1/2 LB. PORK SAUSAGE WHICH I COOKED FIRST SO I COULD POUR OFF THE GREASE. I ADDED 3/4 CUP SAUCE TO THE MEAT MIXTURE ALONG WITH 1 CAN CHOPPED MUSHROOMS AND OTHER INGREDIENTS LISTED. ALSO ADDED SOME FRESH BASIL. PUT THE ROLLS OVER CABBAGE LINED 9X13 PAN (THIS KEEPS THE ROLLS FROM STICKING). BAKED IN 350 OVEN TIL HOT AND BUBBLY.

Fresh Strawberry Pie I

I used the entire gel mixture for one pie which had strawberried piled high. After pouring the gel over the strawberries I was afraid it would not set up as it seemed a little soupy. However, it set up perfectly in a couple of hours. It is as someone said "fool proof". My husband said I used a little too much gel mixture but it was needed to hold the strawberries together. It was quite tasty!

Mom's Best Macaroni Salad

I omitted the sugar in this recipe and it turned out great. I think the sugar would make it too sweet. It was just perfect - the right amount of sweetness from the condensed milk!!!!!!!!!!
