Maple Hot Chocolate
Delicious! Instead of maple flavouring/syrup, I just added more cocoa. Chocolately and creamy.

Good Old Fashioned Pancakes
Fantastic! My pancake-connoisseur husband confidently declared that these are the best pancakes he has ever eaten! I didn't follow the directions of the recipe exactly but took the advice of some viewers - I let the egg come to room temperature, I slightly heated up the milk, made sure the butter was completely melted, added 1/2 tsp. vanilla, cut down the salt to 1/4 tsp., doubled the sugar to 2 tbsp., cut the baking powder down to 2 tsps, used 1/4 cup butter, mixed dry ingredients and wet ingredients separately, and whisked together but was cautious not to overmix. I also let the batter sit for 10 minutes before cooking. I used a non-stick griddle at 350F to cook the pancakes. The batter is quite thick/sticky but don't be discouraged... they taste amazing. The days of pancakes from a box are long gone! Thanks for the wonderful recipe that has encouraged so much tweaking. With the above recommended changes, you won't be disappointed!

Balsamic Roasted Red Potatoes
Very flavourful potatoes. I cut the recipe in half and they still turned out beautifully. Next time I make these, I think I will cut the vinegar back a bit. I absolutely love balsamic vinegar but think that presentation might be improved (the colour that a previous poster mentioned) without sacrificing the flavour. Thanks for the recipe.
