About this Cook
I'm a mom of 4 boys living in a midsize community in the midwest. I work full-time so finding time to cook as much as I'd like is sometimes hard.
My favorite things to cook
I love to cook just about everything. Probably my favorite thing to cook is bread, but desserts come in a close 2nd.
My favorite family cooking traditions
Cooking Southern holiday meals. I'm not from the south, but my parents were so I'm a pretty good Southern cook even if I do live in the North!
My cooking triumphs
Duplicating my Aunt's dressing and my Mom's rolls. I'm the only one in the family that can do it, and since they have both passed away, that makes me pretty happy because when I cook those things, I think of them.
My cooking tragedies
Cooking with wine. I don't drink wine, so never seem to get the right taste. I've just about given up.

Peppered Beef Tenderloin
This is a good method for cooking tenderloin. I did tweak the recipe a bit. I used a spicy steak seasoning which already included garlic,so just added a little lemon pepper since I didn't have any lemon. The key to a good tenderloin is to use a meat thermometer. Take the meat out when the temp reads about 10 degrees lower than what you want. Once you take it out of the oven, tent with foil and let it rest at least 10 minutes before cutting. The temperature will continue to rise during this time which will result in a juicy roast. Beef tenderloin is an expensive cut of meat, but if you buy it whole, even for a family of 6 (which I have), you can cut the whole roast into 3 smaller ones which will be enough for 3 dinners, plus a little left over for sandwiches. And its way cheaper, not to mention better, than going out for an expensive steak dinner!

Kettle Corn
This kettle corn is great! I'm so happy that now I don't have to wait until the fair to have kettle corn, and I can have it without spending $8.00 for a bag! I didn't have any problems with burning. I used half butter and half popcorn oil, and the same amount of sugar, and used a Whirley Pop for cooking. I think being able to constantly stir helped the popcorn not to burn. This popcorn is so good that if you don't have a Whirley Pop, I would go out and buy one just to make this kettle corn!

Iced Pumpkin Cookies
Great recipe once I made a few changes. My family doesn't like pumpkin, so I use a cup of homemade sweet potato pie filling instead, and used a half cup of dark brown sugar, after cutting back the white sugar to a cup. I also wanted a cookie that would be easy to pack for lunches, so I decided instead of the icing, to roll the cookies in a mixture of raw sugar and cinnamon. The raw sugar gives the cookies a nice crunch, and the brown sugar makes them less like cake. Excellent!
