Pumpkin Pancakes
I started making these pumpkin pancakes to get some fruit into my no veggie, no fruit son. It worked like a charm. I make it with both canned and fresh pumpkin, whatever I have on hand. Now, I make up 1 cup of whatever I have laying around - banana, carrots, whatever - he doesn't know the difference. They always taste amazing. Love how little sugar there is - the slightly sweet flavour is just right. 5 stars all the way for this wonderfully versatile recipe!
