Buffalo Chicken Dip

I used Blue Cheese Dressing instead of Ranch and because I was short on time, I just dumped everything into the crock pot. I microwaved it for 5 minutes to soften the cream cheese and start the melting then put it on high for about 30 minutes til it was melted through. It was a big hit. i served it with wheat thins and celery sticks.

Greek Chicken Burgers with Feta

the only thing i changed was i used ground turkey and added a few minced garlic cloves. these were spectacular. i made a sauce from miracle whip and sriracha (those were the only things i had, really) and it added a good sweet/spiciness. my fiance actually said "this may be the best burger i've ever had" and he wants it to go on rotation for company! thanks for the recipe!

Pork Apple Burgers

these were great and i only made a few minor changes: i used ponzu sauce instead of teriyaki, i topped them cheddar, i grilled the pineapple slices and smeared the buns with bbq sauce. my bf isn't pork fan but he absolutely loved these! really juicy and tasty. thanks!

Fast and Easy Tofu Lo-Mein

i thought this was ok. i gave it 4 stars for its convenience factor. i thought the tofu tasted a little bland. i decided to spice it up by finishing this with a few splashes of ponzu sauce. i served it with egg drop soup II. it was a good, fast meal.

These are pretty good! be sure to use the albacore tuna or they will be too fishy! you can't even really tell it's tuna if you use the albacore!

Slow Cooker Taco Soup

this was great but i did make some changes. i didn't add any water and i used frozen corn and 2 frozen chicken breasts instead of canned and beef. i also just added some chili powder, cumin, brown sugar, minced garlic and a cube of beef bouillon instead of taco seasoning. i let it cook on low all day, then added a can of beer and turned it up to high for an hour. really good!

Asparagus, Feta and Couscous Salad

this is really delicious. i halved the amount of the couscous but keep the remaining ingredients the same. however, i used about 3T of parmesan cheese instead of feta and it is great! i am serving this with pan seared red snapper from this site for dinner!

Chocolate Chip Orange Zucchini Bread

these are great! i also used half splenda and half brown sugar. i also left out the nuts, my bf hates them! i made this into muffins and they are superb. i made an orange glaze as well, but i think this would be great without it.. it gets a little too sweet with the glaze.

Restaurant Style Chicken Nachos

this was delicious! i too used the canned chicken, but i used 2 cans and it was a lot of chicken which was perfect for us. i also did not have any green onions, so i just yellow. i also love lots of onions on my nachos, so i used a whole chopped large onion in place of the tomatos. these were really good... even leftover!

Filet Mignon with Rich Balsamic Glaze

this is great! I didn't have any red wine in the house, so i used some marsala cooking wine instead. i also cooked the steaks for a little longer. The sauce never really became a glaze, but it may be because of the cooking wine. We used the sauce to dip the steaks in because it was so good!

BBQ Tuna Fritters

these are absolutely great! they are super simple, too. my bf wasn't sure when he saw all the ingredients laid out on the counter, but he couldn't stop eating these when they were done. after his first bite he said, "Wow, these taste like they should look colorful!" well, whatever that means, these were really good!

Cranberry Stuffed Turkey Breasts

these are awesome!!! i rolled the turkey as instructed, then laid it in a baking dish and surrounded it with the left over stuffing. it was super! my bf loved it. it was nice to have such a festive meal for no certain occasion. i served this with the sweet potato oranges from this site and it made a great presentation! i had 2 turkey breasts and used them for this recipe. i assembled one for dinner that night and put the other in the freezer.

this was ok... i have a feeling the type of ranch dressing makes a big difference. mine wasn't that good, so i think that may be why i didn't like it too much. i will try this again with a higher quality ranch dressing.
