Pork Chops with Cranberry Balsamic Sauce

This was great! Love recipes that call for ingrediants that I have or can substitute easily with what is on hand. I had a boneless pork loin that I sliced into chops. No lemon pepper so I seasoned with Montery Chicken Seasoning. Boullon instead of stock. Used the dried cherries and berries mix I recently bought at Sam's Club. Served over rice. Everyone liked this, even the 16-year-old male child!

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

A very solid chili for a group, won't offend anyone. Those who want it spicier can add their own Tobasco sauce. I added garlic and a can of chili peppers, served over rice with cheese, sour cream and cilantro. I like my chili a little wetter, so used 2 cups of broth but I did not add the liquid from the black beans. For variety, I think I would add garbanzo beans, corn and chopped tomatoes. I will be making a few meals for over 100 people soon ~ I think this will be one of them!

Stuffed Pork Chops with Gorgonzola and Apple

Superb! Would do the finest resturant well. Used thick-cut boneless loin chops from Sam's Club. Based on recommendations, I used one medium sized apple per chop, added finely chopped walnuts to stuffing with a splash of balsamic vinegar, and browned chops in a pan before baking. I used the same pan for the sauce, giving it a lovely color. Only had white wine, no sherry, but it was just fine. Added leftover stuffing to sauce in the last minute. Served with mashed pototoes to soak up the lovely sauce.

Pollo Mediterranean

Lovely. Having no sour cream in the fridge, I substituted half and half. Also, I increased the sauce a bit because I served over bowtie pasta and, well, let's face it ~ you can never have enough sauce! I might ease back a tad on the salt next bime but my husband thought it was perfect as is. This tasted like something you would get in a fine resturant, but was so simple and made with ingredients I had on hand. Does life get better than this!?!

Eggplant Sandwiches

Wonderful! With a garden producing eggplant faster than I can use it, I'm always looking for recipes. This is a keeper. To prevent sogginess, I sliced the eggplant, layed it on a paper towel, lightly salted, and topped with another towel. This pulls out the excess moisture. Thirty minutes later, I just rinsed and dried the slices, then proceeded with the recipe. I didn't have fresh tomatoes, so I used a bit of spaghetti sauce and served on regular toasted bread. My husband and teenage son both raved about this meal.

Spanish-Style Chicken and Sausage

A hit with the family. Tastes a lot like jambalaya. Had to substitute for ingrediants on hand: used hot instead of sweet sausage, eggplant instead of peas (adding with onion), canned tomatoes instead of fresh (added juice as well), brown rice that I cooked separately (used about 1 cup of chicken broth in dish, added rice at end and let it sit in pan for about 10 minutes). Very good and easy.

Gramma's Apple Bread Pudding

This was lovely. I made it for dessert while visiting family for the holidays. My sister-in-law's grandmother kept grousing, "I've never heard of applies in bread pudding. Who puts apples in bread pudding." Joy..... Well, even she begrudgingly admitted it was ok. Everyone else loved it. Like others, I simply used cinnamon raisin bread and didn't bother with the sauce. Try this recipe on a cold day. You'll love it.

Mexican Bean Stew

Very nice. I made this while a hurricane was knocking on our door. Cheated by substituting two 15oz cans of black beans and 1 can of Garbanzo, and adding 1.5 cups of chicken broth. Didn't have corn on hand so skipped it. The cinnamon added a lovely layer of flavor. The cayenne added an essential edge. A dollop of sour cream might have been nice, but did I mention the hurricane....

Turkey Avocado Sandwiches

This was lovely. Like others, I substituted the salsa I had on hand for the taco sauce. Also, I used a 95% avocado guacamole spread instead of the sliced avocados - less expensive and easy to spread on the bread. I concur that this would be wonderful as a wrap. The whole family loved it and agreed that it would make a nice lunch with guests.

Shrimp Fettucine Alfredo

Very good. I had no problem with my sauce thickening. I wonder if the problem people had has to do with the type of Parmesan cheese. I don't use the stuff in the green cylinder. Instead I grated fresh Parmesan. Because I grated it coarsely (much easier) I used about 3/4 cup instead of the 1/2 cup (6 tablespoons) called for. Also, for the four of us I used 1/2 pound of pasta and 2 pounds of shrimp (my husband asked for the extra shrimp!). It was lovely, but definetly not swimming in sauce. If you like alot of sauce, follow the advice of others and double.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Wow! Simple and simply delicious. I had raw shrimp, so sauted them with the mushrooms. Taking a queue from others, used 6 oz of cream cheese, 1/4 cup butter and substituted milk for water. Make this dish - you won't be disappointed!

Chicken Fajita Pizza

Excellent! If you like fajitas, you will enjoy this. The only changes I made were mostly in quantity: I used extra salsa, cut the chicken in bite-size pieces, used a whole onion and pepper, and added some Mexican-blend cheese.

Danish Pastry Apple Bars

Very good. As did others, I had trouble working with the dough. My solution is to roll it out a bit then smoosh half the dough into the bottom of the pan, add the filling, and then place the rest of the flattened dough in pieces on top. It leaves a lot of "cracks" but I choose to view it as a more "rustic" look. Besides, this tastes so good, we're too busy gobbling it up to worry about how it looks!
