Chewy Red Raspberry Squares

these were very tasty! I wanted to try something a little different and this was perfect. I followed the directions to a "T" and they were perfect. I let mine cook for only 30 minutes and that was plenty enough-will definitely use again. thanks!!!

Easy Fried Eggplant

I wanted to eggplant since i had never had it before and this was delicious! i did my homework on eggplant before i even tried this. after i washed and peeled it, i soaked it in salt water for a few minutes. I drained and added seasoned salt and pepper. i also added wishbone ranch dressing to the egg and used italian seasoned breadcrumbs. i used enough oil to cover the bottom of the pan and they came out wonderful. I also used some ranch dressing for the dipping sauce. will be using this again-thanks for the post :)

Giant Chocolate Chip Cookie

this really hit the spot! I was just looking for a recipe for choc. chip cookies and came across this one. i used a 16" pizza pan, but I scaled the recipe down to 12 servings(i didnt want it to overflow)and it was plenty enough. I used semi sweet choc chips and white choc chips along with walnut chips and it was wonderful. I followed the suggestion of a user and lined the pan with foil and sprayed with Crisco flour/shortening spray. I put the dough in a ball on the foil and covered with parchment paper and rolled the dough out evenly with a rolling pin abt an inch from the edge of the pan. (You dont want to roll it all the way to the end or it will bake over the edge of the pan). I didnt have any problems at all with it sticking and it came out very nice and chewy- i even took a large biscuit cutter and made a few "sandwiches" with vanilla ice cream in the middle and froze for later-yummy!! thanks for the post :D

Coconut Shrimp II

this was delicious!! i put the coconut in the food processor to make it a little finer and i didnt have any problems with losing the coconut in the oil. for the dipping sauce, i mixed spicy brown mustard and honey..excellent! will make again :)

Homemade Crispy Seasoned French Fries

this was a nice change from the regular fries. I made these to go with the Coconut shrimp from this site.here is what i did; instead of water, i used some of the beer left from the coconut shrimp II and doubled the listed dry seasonings and i also added ground red pepper, garlic powder, onion powder and a dash of sea salt. this is definitely a keeper. thanks for the post :D

Chewy Peanut Butter Brownies

very good brownie! i thought i would try my hand at this since i happened to have some peanut butter. I added about 3/4c of peanut butter and omitted the salt and I mixed it all by hand with a wooden spoon. i didnt want to chance it and use a hand mixer and overwork it and they came out great! the outer crust was great and the inside was nice and chewy. i followd the suggestion of another and sprinkled some milk choc. chips after i took it from the oven and let that melt and spread it on top..very good with a tall cold glass of milk.. this is a keeper..thanks :D

Best Brownies

this was a prety good recipe. I had a request to make some brownies and found this recipe. I doubled the recipe and added some walnut chips and followed the suggestion of another and used 1c of brown sugar and 1c white sugar. I omitted the baking powder and I only used 3 eggs which was plenty enough. I didn't use the frosting, i just dusted with powdered sugar. will definitely make again...thanks!

Chocolate Chip Krispies

This recipe was pretty good. it didnt have as much "crispy" as i thought it would, though. it was more crunch/chewy. i also used 1 1/2c milk choc chips and 1 1/2c of butterscotch chips and 1c of walnut chips. very good mix of flavors. will make again. thanks

Magic Cookie Bars II

I made some and took them in to work and they were gone in a matter of minutes. I followed the suggestions of a couple other readers. I wanted a little more crust, so I mixed 3 cups of cinnamon graham crackers and 1 cup of melted, unsalted butter and pressed in the pan. I poured half the condensed milk on top of the mixture and then the other ingredients and topped off with the rest of the milk and they were so soft and chewy! I will definitely try this again but without so much coconut and maybe some butterscotch chips..definitely a keeper!

Brown Sugar Meatloaf

This was one of the best meatloaf recipes I have come across! I made a few adjustments. I used half ground beef and half ground turkey. I omitted the onions and salt and used dry onion soup mix(didn't want to risk being too salty!). I subbed honey garlic bbq sauce for the catsup and added 1tbsp worcestershire sauce to the brn sugar mixture. I put of a couple slices bread in a 9x13 baking dish to absorb the grease. i brushed the bread with the mixture and put the loaf on top of that. i also brushed the loaf with the mixture and basted every 15 min. while cooking. Wonderful with garlic mashed potatoes..will definitely be making again...thank you :)

Beth's Spicy Oatmeal Raisin Cookies

I wish i could give this more stars! this was an excellent recipe. I read quite a few reviews and combined some of the modifications for a wonderful recipe :) here is what i did. i did not have ground cloves, instead I used 1 1/2 tsp of cinnamon and 1/2 tsp each of nutmeg and allspice. i used all butter instead of the butter/shortening combo and they came out very moist and delicious. i also added chopped walnuts and soaked the raisins in hot water to make more plump. to top off, i used the brown butter cinnamon glaze as suggested by another user and these were perfect. needless to say,I'll be making another batch later on! thanks for the post :)

Butter Pecan Bars

Unfortunately, mine were not gooey as i had hoped for, but nevertheless this was a great recipe and they were still chewy. i cut down the white sugar to 1/2 cup and added some choc. chips and walnuts and the flavor was awesome. i think next time i will only bake for 35 min. maybe that will make it more gooey will definitely make again..thanks :D

Seven-Up™ Cake II

this was a wonderful cake! as others suggested, I only creamed sugar and butter for 10 minutes and that was plenty enough. I sprayed my pan with Crisco with flour(in light blue can) for baking and had no problems with the cake sticking. I also only used 2 cups of sugar(3 seemed a little excessive), used lemon juice instead, and used 1 cup of lemon-lim beverage and it came out perfect. I took to work for a potluckand it was gone in minutes. will definitely use again! Thanks :)

Fruited Curry Chicken Salad

this was a wonderful salad, especially the next day after the seasonings had settled in. i don't care for celery, so i left that out and instead of pecans, i added toasted walnuts. i also added a little sour cream for a smoother texture and it was a big hit! will definitely make again. thanks for the post :)

New England Clam Chowder I

great recipe! I added a couple of cloves of fresh minced garlic in with the onions for a little more flavor and some minced crabmeat. it was fabulous!! the soup was a little too runny, so i took the suggestion of another reader and added some dry potato flakes to thicken it up. i think i will also add in more clams next time, but this is definitely a keeper! thanks for the post.

Grandma's Sour Cream Pound Cake

this is a delicious and moist cake! I had some fat free sour cream that I needed to use and this recipe was perfect. it was actually a little too sweet for me, so the next time I will not use as much sugar. Didnt have any mace, so I used a pinch of nutmeg. i also added a tsp of vanilla extract and a tsp of almond extract for a littl more flavor and was not disappointed. very good with vanilla ice cream. this will definitely be added to my list of favorites. thanks for the post :D

American Girl's Peach Cobbler

this was a great recipe. i actually doubled the dry ingredients and added a little more milk and peach juice because i like a bit of crust. I added cinnamon and nutmeg to the top before baking and it came out perfect. served with vanilla ice cream and it was a big hit with the family! thank you :)

Best Peach Cobbler Ever

this was not very good at all. the batter was too thin and after baking, it was gooey and the butter was floating on the top. it was a big mess. will not be trying again. thanks, anyways.
