Christmas Strawberry Bread
I really enjoyed this recipe! I used fresh strawberries instead of frozen sweetened ones, and I think if they had been pre-sweetened that it would have been really overpowering. I also used vanilla extract (I couldn't find strawberry extract anywhere), and it worked wonderfully as a substitute. My bread also caved in the middle - and got kind of soggy in the center after I poured the "frosting" over it. I'm not exactly a baker though, so I'm not sure what I did wrong. However aesthetics aside, everyone loved it, and I would definitely make it again! :)

Pomegranate Feta Salad with Lemon Dijon Vinaigrette
This salad is DELICIOUS. I used fresh spinach with chopped romaine lettuce instead of the packaged bag greens. I also added a little more olive oil and salt to the vinagarette because it was a little too tart when I tasted it. It also seemed to make an awful lot, so I didn't pour the entire amount on. Pomegranates were out of season when I made this, so I used sliced fresh peaches instead, and it worked wonderfully. The salad was a HUGE hit at my mom's birthday dinner, and everyone went back for second helpings!

Agedashi-esque Tofu
Super yummy and easy to make! I probably would season the tofu a bit first when i make it again. Very delicious! :)
