Maryland Crab Cakes II

Reviewed: Jun. 12, 2009
I have lived in Maryland all my life, and these, I'm sorry to say, were not good crab cakes. They were dry and had a poor taste besides. We will not be having these again. What a terrible waste of a pound of backfin crab meat!

Shepherd's Pie VI

Reviewed: May 2, 2009
Very good, but I have to admit I changed some things. First, I used instant mashed potatoes. Second, I used frozen veggies. I sauteed the beef and onions as instructed, but added broiled steak seasoning and some salt free beef bouillon and water (instead of broth) to the mix along with the flour and ketchup. It made a very nice gravy. I poured that into my dish, layered the frozen vegetables in, then the potatoes, then the cheese and some paprika. I baked the result (which was very pretty) covered for 10 minutes at 325 to steam the veggies a little and then uncovered for 20 minutes at 375 as the recipe instructs. This was SO good! Will definitely be making again! A+

Alaska Salmon Bake with Pecan Crunch Coating

This was very good! It did take a heck of a lot longer to bake than I thought it would, however.

Swanson® Ultimate Mashed Potatoes

These were fine, but I honestly couldn't really taste the chicken broth. I felt bad that I used so much instead of just using water. Not a thing wrong with the potatoes themselves, I was just hoping for more chicken flavor.

Chocolate Ganache

This is the yummy! One warning, though I don't think it's a detractor from the recipe itself - this doesn't really keep all that well for next day use. Try to make only what you need and use it all up.

Corned Beef and Cabbage

Reviewed: Mar. 22, 2009
Okay, so I know I shouldn't change a recipe and then review it, but I was looking in this case for instructions on how to do corned beef in the slow cooker. This was GREAT! I had a 4 pound brisket, and I filled the slow cooker as full as it would go with onions, carrots, and potatoes (we don't do cabbage). I sprinkled the spice packet, black pepper, onion powder, and garlic over everything, added the bay leaf, and added the water. I set the cooker to 10 hours on low (since I had scaled up the recipe) and when I came home everything was PERFECT. My friends really liked it and this was by far the best and easiest corned beef I have ever made. Woo! =D

J.P.'s Big Daddy Biscuits

Fantastic and simple biscuit recipe. You could add anything you wanted to this recipe, but it really doesn't need anything. I will make this again and again!!! It's also great that it doesn't call for anything out of the ordinary - most people have this stuff in their kitchens at all times.

Maine Lobster Lasagna

This was pretty good, but mine turned out kind of bland. Not sure what I could do to spice it up. Marylanders default to Old Bay for seafood, but that's not really what this recipe calls for. Hm...

Brownie Biscotti

These were pretty good, but nothing to get excited about. I drizzled half of them with white chocolate icing. Also - the temp and times are way off in this recipe - try 325 for 35 minutes instead. Good luck!

Roasted Red Pepper and Tomato Soup

Reviewed: May 7, 2008
As made, this was very good, but not quite excellent. It ages well, and is actually much improved the next day. The second time I made it I used half thyme and half basil, and grated some parmesan cheese instead of sour cream - then it was excellent!

Cranberry Pistachio Biscotti

Reviewed: Mar. 25, 2008
These were really yummy! My mom, who had never had biscotti and was very suspicious of them, had nothing but praise for them. They were easy, but a warning to the wary - the batter is difficult to work with and does not taste good. You just have to trust in the recipe - the final product is worth it!
