Beef Tenderloin With Roasted Shallots

Wow, this was phenomenal! I made this yesterday for Thanksgiving because we already had our turkey meal on Saturday. Everyone loved it! Also, some reviewers mentioned the sauce being a lot of work, I didn't think it was really very difficult at all. I did add cornstarch to the sauce to thicken it because it wasn't thickening as much as I wanted it to. Also, for some reason my meat seems to get over-done, took it out at 125 degrees and the rarest part was medium. We prefer medium-rare, but it was still delicious. Planning to make this again for Christmas dinner with other guests.

Antipasto Pasta Salad

This was delicious. I changed a few things . . . used provolone cheese instead of Asiago, used cheese tortellini instead of shells, used cream balsamic vs red. Turned out quite yummy!

Holiday Chicken Salad

Delicious! I made it the night before, used a grocery store rotisserie chicken & replaced the green pepper with green apples. Many of my guests commented on it, a couple asked if I made it myself & several asked for the recipe. Will definately make this again!

New Red Potato Salad

This was just okay. A very basic potato salad recipe. But, not great unless you add to it. Mine turned out pretty good with some additions, but the recipe as is, is kind of bland.

Baked Slow Cooker Chicken

I've made a whole chicken in the slow cooker before, but couldn't remember how long to do it, so decided to go by this recipe because of the good reviews. The time is WAY off. I had a 4.5 lb chicken, put it on low (did not start on high b/c I just knew that would be too long) & it was overcooked when I check it at 7 hours. Also, needs more spices. Sorry, just not a good recipe.

Alyson's Broccoli Salad

This was great! I made this for several family members who had never had broccoli salad. They were skeptical when I mentioned what I was serving, but then ate it up & loved it. The leftovers were even better the next day . . . and there was not much leftover! Next time I will add the bacon & sunflower seeds ahead of time & let the flavors blend.

Harvest Rice Dish

This was excellent! Unfortunately, I didn't have orange zest & decided to add orange marmalade instead. I ended up adding too much which gave it too strong an orange flavor. Next time I will just leave it out if I don't have it because it was fantastic before adding the orange marmalade.

Lasagna Alfredo Roll Ups

Simply fantastic! I did replace the alfredo sauce with a homemade red meat sauce, but otherwise followed the recipe. It was delicious & the presentation is very nice. Will have to try it sometime with a homemade alfredo sauce, I'm certain it will be delish!

Mexican Chicken Corn Chowder

My husband said this is one of the best soups I've made!! I did make some changes . . . was looking for a regular Corn Chowder recipe & decided to try this one without the Mexican additions, so did not add the hot sauce, green chili's & tomatoes, and used less cumin. Then, we ended up adding those at the end as garnishes. It turned out really good!

Spinach Chicken Parmesan

This was just okay. I followed the recipe exactly, other than adding a little garlic, and if I make it again, would only do so with some modifications. If I make again, I will pound the breasts and add some bread crumbs to the coating. I'd also add more seasoning as it was a little bland and make more of the spinach mixture.

Rosemary Ranch Chicken Kabobs

Really, really good! We will definately be having these again soon! They were tender and very tasty. I also added fresh veggies to the marinade, cherry tomatoes, green & red peppers, white & red onions and baby portabellas.

Bacon Wrapped Barbeque Shrimp

Wow, I wish I'd made more of these!! They went so fast that I only got a couple and now I want more!! I cooked the bacon in the microwave for 2 minutes first. Sprinkled with Old Bay Seasoning, then brushed with a little Sweet Baby Ray's. Absolutly delicious!

Annie's Fruit Salsa and Cinnamon Chips

I have considered making this recipe several times in the past & I'm so glad I finally made it! It was awesome! Also, I thought about buying chips instead of making them, but I'm happy I decided to make them, they were the hit of the evening! The chips are great with or without the dip, and really not difficult to make.
