About this Cook
I've been married for 18 years and we have 4 kids. I help manage our business, and am very busy with that, kid's sports/activities, appointments, etc. I didn't learn how to cook much when I lived at home, but I've learned a lot since then. I have a few special recipies that are all my own, and that's a pretty neat feeling.
My favorite things to cook
My lasagna and chicken noodle soup. These are my own special recipies and my family LOVES them. I also make lumpia (Filippino version of an egg roll) for special occasions and this is always a big hit.
My favorite family cooking traditions
When baking cookies, the cook gets to eat all of the broken ones! No breaking cookies on purpose though! :-)
My cooking triumphs
Cooking for the high school football team dinner, two times, and for my friends surprise anniversary party. There was plenty of food, everything came out great, and everything was ready at the same time. It looked like I was a really good cook and that I had it all together. Nobody knew it was just luck. :-)
My cooking tragedies
I found a recipe for what I though would be individual chocolate cakes with the melted fudge center. I was going to make this for a casual dinner party I was attending. I prepared everything and cooked up one for my daughter who could not go. Lucky thing because it was horrid. I had to make a quick trip to the store for precooked brownies and ice cream. Definately not the dessert I had promised.

Lemony Shrimp over Brown Rice
OUTSTANDING! I didn't serve the brown rice, but the shrimp is truly excellent. I will double sauce and serve over pasta next time. I used sherry because I didn't have white wine and it tasted great. This is a recipe that you will want to double, because everyone will want second servings.

Burrito Pie
Add my 5 stars. This is fantastic. I can't eat spicy foods, and for me, it had the slightest hint of zing. I didn't include the beans because of family preference and used corn tortillas, but everything else was the same. I put 3 tortillas per layer and it was not soggy at all. I made a half size because we are a family of three, but will make full size next time. You need leftovers on this one. This is outstanding and I'll be making it often.

Awesome Slow Cooker Pot Roast
I've been making this for years. Pork roast works great also. I always brown it first, and add canned mushrooms. I use cream of chicken soup also for variety. If you don't use the water, it will make a nice thick gravy and can be served over mashed potatoes.
