Coconut Curry Tofu
This was very, very good, but with the addition of a few extra ingredients, I think this could be excellent. I followed the recipe exactly (though I did fry the tofu in canola oil before adding to the curry, and I also used more garlic, more mushrooms, and added some fresh green beans to the mix). I think maybe it needs more chili paste than the recipe calls for, and maybe some fish sauce or something? I'll definitely make it again and experiment with it, but it's a great base for a wonderfully healthy meal.
