My Chili

Very seldom do I change a recipe on the first round (I always follow exactly, then change if I feel necessary), but I also never serve a new recipe to others before I try it first. This was an unusual time, so I changed a little. I loved this recipe out of the ones I saw on this site. I doubled the recipe and added 4 jalapenos (1 with the seeds , but I would add 2 whole jalapeno next time with all the seeds). I made the chili powder heeping tablespoons and I added 1 green pepper. Dash of pepper. This turned out wonderful. Many people at the chili cookoff I took it to, told me this was the best spiced chili there. I didn't make the cutoff for the contest because I was late, but it was almost gone before we left. Definately, a make over and over recipe.

Easy Tuna Casserole

My hubby and I both enjoyed this. It was great twist having the fried onions on top. My hubby isn't much of a tuna noodle man, but he enjoyed this so much we will be doing this again.

Broccoli with Garlic Butter and Cashews

Oh my gosh! I made this for Christmas dinner and my dad had like 5ths, my sister took the recipe I printed off, and I had many compliments from my father in law! I would say this has become a staple to this holiday! And many other occassions.

Classic Green Bean Casserole

My whole family LOVED THIS! I made it for Xmas for last year. I swore I would never make Green Bean Casserole because I really didn't like it and it was always around during Xmas at my grandma's. Well I saw this and tried it, and since we all like it so much I will keep doing it!

Stuffed Green Peppers I

I wasn't going to rate this because I always wonder why some people give bad ratings to dishes that so many others give a 5 star rating to, but while talking to a friend she said I really should rate and explain why we didn't like it. My hubby told me he doesn't like stuffed bell peppers of any kind. I thought when I read this recipe it sounded so good and with the cheese would make a great change for us. When we ate it I was disappointed because I felt it should have tasted more cheesy and for me, it had a huge tomato flavor. Don't get me wrong we enjoy tomatoes here, I was just expecting more of a cheesy flavor.

Baked Ziti I

I had to rerate this because, This was so AWESOME! I thought it was awesome the first time I made it, but the second time I made it was so much better. This time when I was simmering the sauce I added three cloves of garlic and about 2 TBLS Pampered Chef Italian seasoning. I took it to work for a coworker's bday and everyone loved it even the "picky" eaters.

Molly's Chicken

This is a Keeper! I steamed some rice and sauteed snow peas, carrots, and green peppers. Then I layered the Rice, veggies, and Chicken. There was plenty of sauce left to spoon over everything. We enjoyed the flavor greatly!

Avocado, Tomato and Mango Salsa

Oh My Gosh! This was so good. My hubby and I had it over backed Mahi Mahi. I also ate it by the chip full what was left over. I did not use as many tomatoes as was called for because I did not want it to be primarily tomato, and I used a little bit more of the Avocado. I actually used equal amounts of Avocado, Tomato, and Mangos. I also left out the oil. With the tomatoes and mango there is plenty of juice in the end result. Definately a keeper in our home!

Teriyaki Wraps

Made this recipe tonight and it was Great! Hubby even liked it (which is amazing for how many veggies it had). I did not use as much Teriyaki sauce as was called for simple because I did not have that much. I used 1/2 cup of Teriyaki Sauce and this seemed plenty. I did not use as much salt due to how much is normally in Teriyaki and Soy Sauce. I used 2 fresh cloves of garlic instead of the garlic seasoning. I did add three chicken breasts, which I first cut into strips then browned in the pan prior to cooking veggies. I took the chicken out of the pan while the veggies did their thing and added the chicken back in at the same time I added the rice. I think had a used as much Teriyaki Sauce as was called for, the end result would have been fairly soupy. The only way to have avoided that would have been to reduce the sauce by boiling or reduce the amount of Teriyaki put in from the beginning. Great recipe definately going to be done again at our home. Thanks for the Recipe!

Cabbage Rolls II

I work nights and am ALWAYS looking for crockpot recipes. My hubby said he enjoyed it. I sleep through dinner, so I ate it for lunch later. It was good the second (first) time around for me. I wish I had gotten more sauce, but that could have just been my hubby not putting it in the container he put my lunch in. Anyways, we'll make it again!

Pancho Villa Baked Tilapia

I made this recipe for my darling husband and myself tonight. I found the fish to be lacking something; I haven't put my finger on it, yet. I will try this recipe again, but I will add some spices like salt, pepper, garlic, etc. My husband said it was good and he would eat it again. It's great meal to loss weight too, but I have to figure out what it lacks.
