Sopapilla Cheesecake Pie

So easy and so delicious! The recipe is good as is, but I like to dump a can of apple pie filling over the cream cheese layer to make it really special!

Amazing sandwich!! I usually make this on Friday night then my husband can munch on it all weekend. I've tried a variety of meats- hard salami, mesquite smoked turkey breast, black forest ham, chipotle cheddar cheese and swiss work the best! So good!

Baked Ziti

Very easy- just like lasagna but without all the time-consuming layers! I made this with 8 oz. of my own meat sauce (Bolognese Sauce from this site) plus a 28 oz. jar of sauce. It was the right consistency- not too saucy. Made this for a dinner with friends and everyone loved it and had 2nd helpings!

Coconut Poke Cake

If you are a fan of coconut- this cake is for you!!! SO GOOD!! I used a standard white cake, but used light coconut milk for the water called for in the directions. When the cake was just out of the oven, I poked holes in it and drizzled with a can of Cream of Coconut. I frosted with standard white frosting and dumped a small bag of coconut over the top. This cake was a big hit at the 4th of July picnic I went to-- there was none left!

Southern Potato Salad

very good recipe! I have made it twice in the last 2 weeks. The first time, I made it as directed, and following the reviews of including a sprinkle of vinegar and 2 Tablespoons of sugar-- thought it was too sweet. The second time, I used the vinegar trick and only 1/2 of the sweet relish called for and thought it wasn't sweet enough!

Sausage Stuffed Mushrooms II

I would give 10 stars! So easy and delicious! I used sage sausage, a 1/3 less fat cream cheese, and a dash of hot sauce, then dunked the tops of the caps in a mixture of bread crumbs and parmesan cheese. Baked 10 minutes, broiled for 2 minutes. Took these to a party and they were gone in record time!
