Victoria's Cucumber Salad
Used a touch of powdered ranch dressing mix and added one small very thinly sliced red onion. Let it sit at least an hour, and make sure to peel the cukes if you want a truly creamy cucumber salad (I didn't the first time, but I will next time!). Thanks for the recipe!

Potato Chowder Soup I
This is great! I didn't exactly follow it, so I don't know if it would be too bland. Since I didn't give it a chance as is, I didn't want to take away a star. I would suggest starting the milk mixture about 10 minutes into the simmer and adding a bay leaf to the veggie pot. I ended up standing at the stove for ten minutes stirring because I didn't want globs in the soup. I also used chicken broth. Put the veggies in first (added a few cloves of garlic)and added chicken broth to cover. I cooked them for about 5 minutes or so--just until tender crisp. Then I added 6 medium potatoes and proceeded as written. Oh, and I forgot the cheddar cheese but it was great even without it! Thanks for sharing! (I plan on adding cooked chicken to it tomorrow. Yum!

Authentic Kicked-Up Syrian Hummus
I hate to knock this down a star, but I had issues with the consistency. I added olive oil to get it to an acceptable level, but next time I don't think I'll drain the garbanzo beans and maybe add a little more lemon juice. I'll also double the recipe because I want leftovers! Flavor is fantastic! An explosion of cumin. Love it with sweet bell peppers--great contrast with the sweet and salty/cumin of the hummus.
