Coconut Pecan Chicken
This was okay. I think it would taste better using mahi or shrimp instead of chicken.

Creamy Rice Pudding
This tastes wonderful, but I've made it twice and it turned out runny both times.

Indian-Style Rice with Cashews, Raisins and Turmeric
I used sliced almonds in place of cashews and purple raisins rather than golden because that's what I had. It was very tasty!
