Zucchini Brownies

I took this to a family gathering, and none of them knew it had zucchini in it. They are really good zucchini brownies, but compared to some regular brownies I've had, the were just okay. Next time I will make a richer frosting- the one with the recipe seemed too sweet.

Pesto Chicken Florentine

I used a box of frozen spinach- sautéed with mushrooms- and it was great. I'm sure fresh would have been better, but the frozen spinach was still really good. Also, I used salmon instead of chicken.

Marie's Easy Slow Cooker Pot Roast

This is the first pot roast recipe I've ever liked- I hate those mushroom soup kinds. I made it once as written, but with beef broth, and it was good if a little sweet. Next time I made the carrots and potatoes separately and it was perfect. My husband thinks I'm a cooking goddess! Thanks!

Awesome Slow Cooker Pot Roast

I did not like this. The meat and veg were fine, but the gravy was nasty. Tasted too much like canned soup.

Brownie Biscotti

To cut calories, I left out the chocolate chips, nuts, and egg wash, and I replaced the half the eggs with Egg Beaters, and it was still pretty good. My husband said they were great with coffee - not too sweet. I gave four stars only because I prefer a crunchier biscotti. Will definitely make again.

Lemon Sorbet

Fabulous. I thawed, processed, and strained a bag of frozen raspberries and added it to the mixture before freezing. Tasted like raspberry lemonade!

Salmon Cakes II

I've been making this for several years, and over time have changed it a bit. The original recipe is great, but I get lazy... I skip the parsley if I don't have it and I usually replace the hot sauce with a dash of red pepper flakes and the cheddar with Kraft grated parmesan. I don't like canned salmon, so I boil four frozen single serving pieces of salmon. Also, to cut the time & calories, I will often make this as a loaf- put it in a buttered loaf pan, top with cheese, melted butter and bread crumbs, and bake for 45-60 minutes at 400 degrees. It's not as fancy, but still one of our favorites. Thanks for the recipe!

Berry Burst Sorbet

Excellent! I changed this a little -- I used strawberries, blueberries, and raspberries, sugar instead of Splenda, and half & half. It turned out great. Next time, I will probably cut the sugar down to a 1/2 cup if I use strawberries again.
