Marinated Tofu

Was very disappointed in both the flavor and the texture. I love tofu in stir fry and cooked up with fruit, but this was just unimpressive.

Vegetable Masala

Cut water to 2 cups and use 14.5oz. can tomatoes in place of fresh. Add 8 ounces red kidney beans to make complete-protein main meal.

This was good. I did cut the fat by not using butter or yogurt, only used 1/2 cup fat free dressing. Will make the same changes aging next time.

Couscous Salad with Dried Cherries

This was better the next day after the flavors had blended. The only changes made were to use a whole carrot, a whole cucumber and added 1/2 a red bell pepper and 1/2 a green bell pepper. Will definitly make this aging.

Hearty Vegetable Lasagna

Mmmm. This was the best I have ever made. Cut the calories with out losing the flavor. Sub. 1/2 egg beaters for eggs and used 1 eggplant thinly sliced in place of the noodles, thus cutting the calories to 313 per serving. Also add 10 ounces of thaw and squeezed dry spinach mixed into the ricotta. Next time I may try zucchini in place of noodles.

Lentil Rice and Veggie Bake

Made with left over spaghetti sauce and green bean because that is what I had on hand. It was good and I will make aging with a few changes. Next time I will add some pepper, also think it would be good with mushrooms.

Great for a low fat, low cholesterol diet. Used other reviews suggestion and sauteed the onion and cabbage in the same pan. For those not on a low fat, low cholesterol diet add some Kiebasa.

Spinach Brownies

Cut the fat and smile. Used 1% Milk, Fat Free Mozzarella, 1/2 cup egg substitute, and Benecol Spread (in place of butter). This was such a big hit and no one know it was low fat. 8+) Will use this a lot.

The Sarge's Goetta - German Breakfast Treat

This is a savory version of something my mother and grandmother used to make when we were kids. They would make a large pot of sweet oat meal, we would have a serving and the rest would be shaped into a loaf and the next day it would be sliced and fried, than drizzled with maple syrup. Mmmm.

Slow Cooker Chicken and Dumplings

Mmmm! Seemed way to thick so add a cup of white wine, which made it perfect. This is very different from what I grew up with, which was more of a chicken stew (peas, carrots, etc.) with dumplings.

Beet Salad with Goat Cheese

This was OK it fell a little flat. Have not given up on it, will try marinating the beets in the salad dressing for a few hours see if that solves the problem. As we were eating every one said they thought it need a little onion sprinkled over the top.

Apple Cake III

Fast and easy! Per other rewires used extra apple filling, 2 cans and that made it plenty moist. I will make this aging for pot lucks, but my family found it a little to sweet for there taste.
