About this Cook
I live in a small coastal town located in Northern California with my hubby and 3 dogs. I love to cook and will try anything once. My husband enjoys being my guinea pig and sampling new recipes for me. My dream was to always become a chef or own my own bistro. Haven't gotten there yet, but there is still time! I enjoy hosting parties and get-togethers for family and friends.
My favorite things to cook
I pretty much love to cook anything. Seems the more difficult, the greater the challenge, the more I like it. I enjoy cooking ethnic foods; especially Thai, Indian & Greek. Baking is relaxing to me and one of my favorite things to do on a cold and dreary day.
My favorite family cooking traditions
Southern cooking styles handed down by my mother and grandmother. Comfort foods my mom used to make. Hosting big traditional Thanksgiving and Christmas dinners with lots of family like my mom & gramma used to do. Now that they have both passed on, I try and keep that cherished family tradition going.
My cooking triumphs
I make a Peanut Butter Chocolate cream cheese cake that is heavenly! This past Thanksgiving was a challenge since I cooked for over 15 people, but it all came out perfect and tasty and I got great compliments!
My cooking tragedies
Pork chops! I try and try and still can't get them right!

Ultimate Twice Baked Potatoes
WOW, these are really good. I made them as a main meal and not a side dish. Very filling, even for my husband who is a BIG eater. I used large russet potatoes and replaced the milk with cream. I know, I know.. extra fattening! but Oh! so good! I also used bacon bits due to time restraints and had a ranch dressing dip on the side. YUMMMM

Tomato-Cream Sauce for Pasta
Very good. I used a 28 ounce can of crushed tomatoes (all I had), 4 cloves of garlic, fresh basil, and a can of tomato paste to make it a bit thicker. It was delicious as well as easy to make on a night I had time restraints!

Brooke's Best Bombshell Brownies
YUM! These are really good brownies. I was very skeptical to make them after reading that they required 3 cups of sugar, but I am glad I decided to try them. We tried them basically right out of the oven and the pan! They were warm, gooey and scrumptious. My hubby loved them. Second time I made them I used Mexican chocolate and cinnamon. They tasted like a Mexican hot chocolate in brownie form! This recipe is a winner~
