Apple Pie by Grandma Ople

Followed directions exactly--won the favorite pie of Thanksgiving (even beating out my chef sister's pumpkin cheesecake). This is a keeper in every way!

Easy Chicken Alfredo II

Tasted really good (I omitted the salt and added some Italian seasoning) but it was very runny. Maybe I did something wrong? Loved that it felt somewhat healthy!

Chicken Puffs

Reviewed: Jan. 9, 2009
Like most other people, I altered this recipe some. I used 4 oz. cream cheese, 1 can cream of chicken soup, a little milk, and about 1/4 cup of sharp cheddar for the filling. Used some of the suggested spices (parsley, plenty of garlic, seasoning salt) and topped with egg white, a sprinkle of bread crumbs, Parmesan, and garlic powder. Baked according to crescent rolls, which was 350 for about 20 minutes. Cooked them over a bit because I didn't want them at all doughy. Delish!

Great recipe. Another way to cut calories and fat is to dip the chicken in fat-free ranch dressing before coating. Kids liked it.

Chicken Spaghetti Casserole I

Reviewed: Dec. 10, 2007
This was really yummy and kid friendly. I didn't have the peppers, but I did add garlic and did saute the veggies and the cooked onions gave it all a slightly sweet flavor. I sauted the veggies in light Italian dressing instead of oil--nice flavor. Lastly, I used half whole wheat pasta and my kids couldn't tell at all!

Spaghetti Squash I

For squash it was pretty good. My kids ate a couple bites and didn't guess it wasn't noodles, but something was missing. I probably would add more spice next time.

Chicken Salad Sandwich

We really enjoyed this recipe. Things were a little different because I didn't have a few things(I ommitted the relish, onions, and celery) and I served it on wheat bread. I will make this again!

Chewy Cocoa Brownies

Reviewed: Apr. 13, 2006
Yum! I did about 1 1/3 cup sugar but could have used just 1 cup. I also added about 3/4 cup chocolate chips and no nuts. Mine were not very done, but I pretended it was on purpose, warmed them up to serve and put a dollop of whipped cream on top. Man, it was wonderful!!! My husband said he used to make brownies just like this and ate them with milk poured over the top.

Betsy's Poppy Seed Chicken

Definately a keeper! It almost tasted like pot pie. I used fat free sour cream and added frozen broccoli, garlic powder, and a little pepper. Also, I just boiled the chicken. Thanks!

No suggestions here--I loved them as is. What a nice change from regular, blah pancakes without much more work at all. Even my very picky 21 month-old ate four!

Grilled Salmon with Ginger-Orange Glaze

Reviewed: Sep. 26, 2005
I will for sure make this one again! There was only time for about 25 minutes of marinade time and it was still just delicious. Because of what I had on hand I used a squirt of prepared mustard (I'll have to find out what horseradish mustard IS!) low sodium soy sauce, ground ginger spice, and a bit more o.j. than called for. We loved it!

Suzy's Mashed Red Potatoes

Really wonderful. I used fat free sour cream, 2% milk, and a little bit less butter than it called for. Then I mashed it all in my VitaMix blender. Will for sure make again because it was so easy!

Grandma's Chicken Noodle Soup

Very nice--I shared half with a sick friend and it had a great, homemade look and taste to it. Like most others I ommited the salt and added carrots, otherwised follwed exactly. The consistancy of the broth was wonderful.

Really was just perfect. Easily reduce the amount of oil, and I think I added a few extra spices for kicks. But it was just wonderful and looked very fancy. Thank you.

Honey Roasted Red Potatoes

Yummy! Like most everyone else, I doubled the sauce. I used prepared mustard and dried onion bits because that was what I had, and I used a little extra honey--it worked out really great. Will for use this again because it looked and tasted really fancy without a lot of work. Thanks!

This recipe is getting closer to the restuarant style I am looking for, but it was a little "tomato-ee" for me. Maybe I just spread it too thick.
