Homesteader Cornbread
This is good if you don't want a super sweet, really cake-y cornbread. This is real cornbread. Great with chopped jalapenos (mix them in with the flour to get them even), cheese, and chopped poblanos on top. Make sure to beat it for 5 minutes. It really does help. Great as a base for taco salad or Navajo tacos as a change. This works well with whole wheat, as well. Just lessen the wheat by about 1/4 - 1/2 cup. And beat really really well.
