This was fabulous! Everyone liked it. I was worried about it being too spicy for the kids so I reduced the cayenne pepper and left the salsa as a topping for those who wanted it. (It wasn't too spicy). I forgot about the sour cream, but my husband used the ranch dressing and loved it.

Fish Fillets Italiano

This was really good. I followed the advice of other reviewers and added a little salt and pepper and Italian seasonings. I also ussed Tilapia, instead of cod. Very tasty, and simple.

Mexican Bean Salad

This was delicious! The only change I made was I substituted a yellow onion, for the red because it was all I had, and I used canned corn. I brought it to a BBQ and people loved it! I just finished the leftovers for lunch!

Easy Decadent Truffles

Oh, these we to die for. I took them to a baby shower and the guest of honor said she couldn't stop eating them. The only trouble I had was not dividing the batch equally (my fault) and one of them was too sticky. It made a mess, but it still tasted great! I made mint, almond and peanut butter (using peanut butter chips as some another reviewer had suggested).

Best Spanish Rice

We have this all the time. It is fabulous! Easy, and I usually have all the ingredients. We use a picante sauce instead of a chunky salsa and it works fine.

Tony's Summer Pasta

This was very good, but a little too garlicky! I think it would have been better with less garlic, or perhaps if the garlic had been sauteed first. There was also a lot of excess olive oil. My husband loved it, but also thought there was too much garlic flavor.

Eggplant -- Easy, Good and Tasty

I thought this was very good. I added some spices (garlic salt, pepper, oreagano, basil) to the bread crumbs to make it tastier. Everyone loved it even my 4 year old. I thought it was a little bland. I also cooked it a little longer and turned them halfway before adding the tomatoes etc. as others had suggested.

Downeast Maine Pumpkin Bread

This was a fabulous recipe. It turned out great. I reduced the oil a little bit, and substituted 1 cup of brown sugar for 1 cup of white sugar. Delicious, friends loved it!

Pasta with Sweet Peas

I thought this was excellent. I tripled it feed my family of four. It went great with grilled chicken. It was so simple and quick. I didn't have canned peas so I used frozen peas. The crushed red pepper gave it a good kick. We topped it with parmesan cheese, everyone goggled it up!

Chocolate Caramel Nut Pie

I have made this twice and have gotten wonderful compliments! I've made it with a milk chocolate ganache and a semi-sweet one. It is very rich and some may think it it too sweet, but I think it is well worth the time spent!

Broiled Tilapia Parmesan

I've made this recipe at least ten times in the last year. And every time I get compliments. We love it, even my two young boys! The only change is that I mince some onion, because I don't have onion powder. We will continue to make this frequently.

Sloppy Joes II

Focaccia Bread

We loved this. We invited a friend over for dinner who has dairy allergies, I'm so glad we could use this recipe. We only put cheese on half of it, so the rest of us could still enjoy the cheese. It was delicious, especially dipped in olive oil and balsamic vinegar. We will make this often.

Pleasant Pork Chops

I thought this was very good. I cooked it for about 40 minutes and it turned out great. My chops were pretty thin, and I only did three of them, and halved the recipe. There were no left overs and my boys wanted more!

Italian Confetti Pasta Salad

Excellent pasta salad. My husband and I loved it. I reduced the mayo to 3/4 cup but could have gotten by with less. The kids thought it was too much garlic. We used shell pasta, because we didn't have rotini, green bell pepper, because we didn't have a yellow one. I can see how they original recipe would have been very colorful. We will make this again!

Imitation Crabmeat Salad

Good recipe. I took the others advice of reducing the mayo (I used 3 Tbsp for a half recipe)and sprinkled part of a package of italian dressing mix. It was still wasn't thick, but it tasted great.

Chicken Tortilla Soup I

This was fabulous. Very easy and tasty. My 2 and 4 years olds ate it up! I also used only chicken broth (no water), only hominy (no corn), and my husband hates cilantro, so we used parsley. We only had cheddar cheese, and it worked well. This may become a regular at our house!
