Summer Corn Salad
This is DELICIOUS! I used canned corn instead of fresh and it was still very good and quick. I added salt according to my taste and added a little balsamic vinegar - i think it made a big difference!

Carrot Cake III
Best Carrot cake ever! Family who didn't like carrot cake loved this one. Followed the recipe and only omitted teh nuts. Will make this over and over again!

Spinach Brownies
This was a good recipe. I did add an extra egg, 4 oz. of chopped canned mushrooms, a red onion for color and some extra provolone cheese. I did put half of the butter in and it seemed enough. I also greased the pan with olive oil. Delicious! It tasted much better the next day for breakfast too!
