Spinach Stuffed Chicken Breast
This was absolutely delicious. I did follow the suggestions of other users and prepared this dish as follows: soaked the chicken in milk and lemon juice (in lieu of buttermilk since I didn't have any), fried the bacon halfway through, took it out the skillet, and sauteed the fresh spinach leaves with fresh garlic and added seasoning salt and other spices. I mixed the spinach mixture with the shredded pepper jack cheese and sourcream and seasoned that just a little. I also added a little seasoning to the chicken breasts. I spooned the filling into each breast, wrapped them with two slices of bacon each, and secured everything with a toothpick. I had a little spinach mixture leftover so I put that on the sides of each piece of chicken in the pan and it cooked down nicely. As this recipe is written, it seems it would be a little on the bland side as it doesn't call for any salt or seasonings (other than black pepper). These chicken breasts were very moist and tender. I will definitely be adding this to my recipe book.

This turned out great! My husband LOVED this dish. I pretty much followed the recipe but made a few changes based on some of the reviews and my own personal taste. I slightly seasoned the roast with seasoning salt, garlic powder, and onion powder. Then I browned it in the skillet and followed the instructions from there. I added a little cayenne pepper, garlic powder, and onion powder to the wine mixture (I used salsa and rotel). I transferred everything to the crockpot and cooked it on high for 4-5 hours. This meat was full of flavor and extremely tender. I served it ith a homeade cilantro lime rice on the side and garlic toast.

Broiled Lemon and Garlic Tiger Prawns
I thought these were just okay. However, I did not add parmesan cheese. It just didn't seem to go on the shrimp. I took the advice of another user and placed the shrimp in a muffin pan and filled each cup halfway with the butter mixture. The butter mixture was good but reminded me of shrimp scampi. There was really nothing spectacular about this recipe, in my opinion. I added some lemon and herb seafood seasoning to the shrimp before adding the butter mixture and baking them. I would probably make this again but would add a little more spice to them.
