This is a great twist on a classic! We all enjoyed it. I decided to only used one slice of swiss and shaved ham to save on the calories a bit and it was fine! Great recipe!

Lime Chicken Soft Tacos

This is a good recipe. I thought fresh cilantro would give it a little more flavor and it did. I also added a little cumin and chili pepper to give it more flavor. My family enjoyed it! Thanks for the recipe!

Tarragon-Dill Grilled Chicken Salad

Reviewed: Jul. 5, 2009
This is a good recipe, but I think it is a bit too tangy with 1/4 C. vinegar and it distracts from the other fresh ingredients. I increased the amount of chicken and there still seemed to be too much sauce. I enjoyed the unique flavors!

Parmesan and Basil Chicken Salad

Reviewed: Jul. 5, 2009
I have made this twice and while I love basil and chicken salad something is not meeting my expectations. I always love to try new chicken salad recipes, but this as is not a favorite for me. I think will try it again, but grill the chicken with a little seasoning. I think it will give it the flavor it needs. What an inspiring recipe. Thank you!!

Great recipe! I added 1 T. sugar and 2 t. vanilla to round out the recipe. I ended up needing to add a little water to thin out the batter b/c I like my waffles a little thinner.

Chicken Dumpling Strips

Reviewed: Apr. 7, 2009
This is a good recipe, but needs more seasoning to make the "soup" better. The dumplings turned out well, but after cooking beyond the initial 15 minutes, some of the smaller ones fell apart. I used chicken theighs ( cooked, seasoned & shredded) and seasoned the broth with onion, more salt & pepper, seasoning salt and I added corn starch to thicken it up a bit. This was a good basic recipe, just not what I was hoping to find.

Brown Sugar Brownies

Reviewed: Apr. 4, 2009
My kids enjoyed these with vanilla ice cream. I wish I would have had chocolate chips to add with them b/c I think I would have enjoyed them more. I used an 8x8 pan and cooked for 25 minutes. They were slightly moist in the middle. I think a larger pan would make them much thinner, so decrease the cooking time.

I wanted a change and this recipe may be a new favorite. I used less liquid smoke- about 3/4 t., and I thought the flavors were great! My husband thought these were the best. I will definitely make them again.

This was not a favorite for us. I flavored the chicken with chili powder and cumin, but still this didn't knock it out of the park for us.

Wyoming Cowboy Cookies

Reviewed: Jan. 26, 2009
These are great! I decided to add heath toffee bits so I decreased the amount of of chocolate chips to a 1 1/2 C and decreased the brown sugar to 1 C. The toasted coconut and pecans are incredible in this cookie. The milk chocolate toffee bits add another crunch to this great recipe. These are so good. I baked mine for 11-12 minutes. They will not be done looking but they will turn out perfect. The cookie will be chewy in the middle. I think we have found a new favorite! I didn't quite have enough oats, so I increased the flour to make up for it. This cookie turned out wonderful. I think you would have a hard time finding a better cookie in a bakery!

Husband's Delight

Reviewed: Jan. 5, 2009
This recipe can be spiced up a bit to vary the taste. This recipe as written is an older, traditional favorite that my mother used to make. Instead of a can of chopped tomatoes, use your favorite jar of spaghetti sauce, 1 T. chili powder and season the meat with garlic salt and pepper. Instead of layering, mix all of the ingredients together so the sauce flavors the pasta better. I don't use quite so much sour cream or cream cheese, but adjust to your liking. The sour cream and cream cheese combine to make the sauce incredible. Don't leave out the chili powder b/c it really adds to it w.o taking it totally the mexican style. I top the casserole with cheese and cover with foil. This is a quick dish to make it and provides your family with that comfort meal.

Quick and Easy Chicken Noodle Soup

Reviewed: Jan. 1, 2009
This is a great recipe. I actually made this twice today. Once, for a sick friend and once for our family. I improvised with whole wheat thin spaghetti for the pasta b/c I didn't have the egg noodles on hand and only had chicken broth. My kids tasted the soup before I took it and loved it, so we decided to make a batch for us as well. I stopped by the store and picked up the egg noodles and some vegetable broth. While it was good, I think we actually enjoyed the flavor the whole wheat pasta added to the soup. Try it for a variation. It's great.

Robbi's M&M Cookies

These are perfect. I followed the recipe as written. The butter flavored shortening sticks are great to use. While real butter may be a substitute, generally shortening tends to give you a chewy middle and crisp edges which is the way I love them. This is a great recipe and my children loved them!

Pecan Praline Cookies

Reviewed: Dec. 17, 2008
We love these! I like to add a sprinkle of chocolate chips after I take them out of the oven. A great clean up saver: use parchment paper to line the cookie sheet. After it cools on the pan for a minute, you can then remove the whole sheet and put on the counter to finish cooling. I then put it in the refrigerator for 5-10 minutes.

Steamed Zucchini

Reviewed: Apr. 23, 2008
We didn't love this. By putting the steamer basket in a pot of water, the zucchini is essentially being boiled. The garlic added a nice flavor but it just ended up being okay even with throwing on a little parmesan at the end.

Feta Chicken

Reviewed: Mar. 31, 2008
We really enjoyed this dish! I have stuffed chicken many ways but had not thought of feta cheese. I dip the chicken in egg before rolling in Italian bread crumbs and sprinkle the dish with oregano and drizzled with a small amount of olive oil. I served it with rice pilaf and steamed asparagus! This will become a favorite!
