Tortilla Soup II

This was a wonderful soup! I changed it up a little bit to suit our tastes, but the thing that really makes this soup great is sprinkling tortilla chips over the top. I will make this again!

Urban Legend Chocolate Chip Cookies

Fabulous cookies! My 4yr old and I made these, we followed the recipe exactly, and they came out perfect! The were chewy inside, crispy outside, and just sweet enough to be satisfied after 2 or 3 (ok, I ate waaay more than that, but who's counting?). We will definitely make these again!

Homemade Pancake Mix

This is a great pancake mix! I added 1 cup of oatmeal in place of 1 cup of AP flour, but otherwise followed the recipe. It came out wonderful; with syrup on top it's just sweet enough and my kids ate it up!

Salmon and Swiss Chard Quiche

This was really good! I made a lot of changes to it because I cannot eat dairy, but the salmon and swiss chard combination was really delicious. I skipped the first two steps because I used a pre-made pie dough and good quality canned salmon (this cut out some time and work). I also used more swiss chard and less salmon because that is what I had on hand. I used olive oil or margarine in place of the butter, and soymilk in place of the milk to make this non-dairy. It turned out wonderful and I have made it three times already! I also use the core part of this recipe (3 eggs to 1 cup milk in a pie shell) to use up just about any left over veggies. If you have the pre-made rolled pie dough on hand the prep part of this dinner is done in just minutes!

Turnip Casserole

I have finally found a really great recipe for turnips! This was very easy and tasty! I didn't have any trouble with the turnips tasting bitter; in fact they were sweet and custard like. I will definitely make this again.

Beetnik Cake

Delicious! I made this cake into two 8 inch rounds; one to take to a potluck and one for home, they were a big hit with both crowds! The only thing I changed was to glaze one of the cakes with a warm brown sugar pecan glaze (brown sugar mixed with chopped pecans, milk, and powdered sugar)and I also left out the allspice because I didn't have any. Both cakes were eaten up, and I left the party with an empty plate! If you are worried about an earthy beet taste or picky eaters try using the glaze; pureeing the beets rather than grating them might help too.

Savory Sausage Toad-in-the-Hole

This was really good! I made it with a whole wheat pancake mix and Apple chicken sausage. Everybody loved it, from the toddlers to the hubby! I will make this again. My husband suggested using a cornbread mix, so I am going to try that next time.

Cauliflower Radish Salad

Yummy!! This was so good in a pita! I did change it a bit; I added shredded chicken and I grated the radishes. I also used a green cauliflower (no, this is not a broccoli mix. Just a green cauliflower). I will make this again!

Mardi Gras King Cake

We loved this King cake! I changed this recipe using JNFAGAN's review because I needed it to go in the bread-maker, and I am lactose intolerant. I made a lot of changes so I only gave it 4 stars. I halved the recipe, used applesauce and rice milk in place of butter and milk, increased the filling amount, and I added fresh lemon juice to the glaze to make it brighter. Yummy! I put it in the bread-maker on the dough setting and then took it out, added the filling, and followed the directions from there. It baked up beautifully, but it was more of a bread texture than cake. I let my kids munch down most of it at snack time with peanut butter spread on top of each slice. My two toddlers LOVED it! My husband did too :).
