About this Cook
I am a 43 year old male batchler who likes to learn how to cook new dishes occasionaly. Because of my health and trying to loose weight I like to try to cook meals that are healthy or lowfat, and occasionaly I will just cook something from the regular menu being careful to either add the ingredients that I want or to substitute ingredients that are better for me. I also like to show my culinary skills off by cooking for family members, friends, or just a candlelight meal for that special someone. I like to experiment cooking different kinds of ethnic dishes as I don't have the funs to eat out always.
My favorite things to cook
My favorite things to cook are mainly dishes made with chicken breast such as General Tsoa's Chicken or Parmason Chicken, every now and then especially in the summer months I like to BBQ chicken breast or ribs. I love to cook porksteak or porkchops mostly baked but ocassionaly fried. Love to make soups with lots and lots of vegetables as well as bake patotoes. Like to cook greens frie chicken drumsticks especially all types of beans and peas. Fond of tatter tot casarole, turkey burgers, fish, fries, baked cookies, cakes, cinnamon rolls, and pies.
My favorite family cooking traditions
I guess as far as traditions are concerned I like to cook things such as chicken pork beef greens okra cornbread soups and other things that I watched my mother cook. I learned to cook from my mother as well as my sisters. Now I cook mostly soul food, but I get a lot of recipies off of this site.
My cooking triumphs
Mostly everything I have tried to cook I have been succesful at which helps build my confidence in cooking for self and others
My cooking tragedies
I once tried to make some fish cakes from a recipie that I found in a article, but for some reason the batter was to runny to form the patties. And once I tried to make bread pudding that just didn't work out for me

Cracklin' Bread II
I have had this cracklin bread several times and each time is an experience in itself. I have cooked it for several other people and everybody just loves it. Being from the South it is hard to find any true southern cooking in Lansing, MI until I came across this recipe. It is very easy to make and does not consume a lot of time. Will definently make this again very tasty and reminds me of a taste of Alabama very good recipe.
