Sausage, Zucchini and Two Pepper Pasta

this was really good! i was looking for a flavorful pasta and sausage dish without tomatoes, and this did the trick. i used red cooking wine because that was all i had, and only used about half of the chicken stock. even so, the "sauce" never thickened, but i didn't think it mattered. very good dinner!

Burgundy Pork Tenderloin

the whole family loved this. it was super easy to make, too. i used an extra lean loin, but it was still pretty tender. i didn't use the celery because i don't like it, but i added a bay leaf. as others suggested, i seared the loins on both sides before putting them in the baking dish, and i used half beef broth and half red cooking wine, since that's what i had on hand. i wished i had added a little more broth after i added the gravy mix, because it was so thick it wouldn't pour nicely. the gravy had a good flavor, but even using low sodium gravy mix, i felt it was too salty. next time i'll use low sodium beef broth as well. overall, very yummy!

Ricotta Gnocchi

this gnocchi was really good. i didn't make the sauce; i just used jarred sauce to save some time and some dirty dishes. it took me a while to roll the gnocchi out, but it was my first time making them so i think with a little practice it won't take as long. my husband, who loves gnocchi, says it was perfect. my 8 year old and 16 month old couldn't get enough. the baby cried when it was gone. i recommend doubling the recipe, though, because even though i served it with italian sausage and sauce, there was barely enough for 2 adults, 1 kid, 1 baby, and 1 portion to save for my daughter's lunch tomorrow.

Chicken Meatball Soup

my family liked this very much (baby, 8 year old, husband, and me). i used low sodium broth, and it still ended up having an excellent flavor; my husband went so far as to say the broth was perfect. i think the meatballs could use a little less pepper, but otherwise were very good. i would have liked to use parsnips, but i didn't have any; i did have sliced fresh mushrooms so i used those. i also added a little chopped spinach at the end to give it a little more color and to get some more veggies in. very good.

Black Bean Vegetable Soup

this soup is excellent. kid, baby, and husband all love it. i use only 3 cups of broth, and i add a tablespoon or so of flour when i add the chili powder and cumin to help thicken it a little. i also add a little extra chili powder and cumin. this gives it just enough flavor for my family, but if you want it spicy, you'll definitely need to add more. i serve it with a dollop of sour cream and a sprinkle of shredded cheese.

Hot Dogs 'n' Rice

this was just okay. it's definitely good that the ingredients are ones i typically have on hand; however, i think the ketchup was too sweet, and overall the dish didn't have enough flavor. i added a little salt and pepper, but it would be better if you added some more spices and/or maybe beef broth. it could be a good starter recipe though, and i may try it again with some additions.

Zucchini Tomato Soup I

my 8 year old daughter said i should give this "as many stars as you can!" she loved it so much she wants it for lunch tomorrow too. also, i put a little bit in my food grinder and fed it to my 12 month old, who loved it as well. i had to make some substitutions according to what i had on hand: i used a large can of diced tomatoes instead of fresh (i only did 1/3 of the recipe); i used a couple teaspoons of beef bouillon instead of the soup mix (i think the soup mix would make it too salty anyway); i used one zucchini and one yellow squash; i used minced garlic instead of powder; i used frozen chopped green peppers. we topped it with a little shredded cheddar. it turned out delish and it was quick and easy to make. a keeper for me!

Chicken and Summer Squash

i like this recipe a lot and i make it often. it's easy to alter according to what you have on hand. i've made it with fresh tomatoes and canned, and they are both good, but the fresh is best. sometimes i throw in some fresh mushrooms, and if i only have squash or zucchini but not both, it still turns out fine. also, i use paula deen's seasoning on the chicken when i brown it instead of just salt and pepper. i don't think it is bland at all. i don't let all the juice cook off and i serve with orzo or rice. it's a good, healthy meal.

Lentil Soup

my seven year old loves this soup! she always cleans her bowl when i serve it. she told me she would give it googolplex stars. my husband only gives it 3, because he doesn't like lentils so much. i say it's delicious, healthy, and easy to make. definite keeper.

Famous Pork Chops

the whole family loved these--everyone gave them 5 stars. by the end of dinner, my husband and daughter were stealing the few bites i had not yet finished right off my plate! i did go by other reviews and used 1/2 the butter, seasoned the chops before coating (salt, pepper, sage), and uncovered for the last 10 minutes or so. i think the chops would have been soggy if i hadn't uncovered; as it was, they were perfect. also, i used whole wheat ritz crackers. thanks!

Slow Cooker Pork Chops II

i liked the ease of preparation, and the chops turned out tender and juicy, but the flavor was just not quite to my taste. i, my husband and our 7-year-old agreed that it was okay, but we would prefer a little different flavor. i think i'll try this again and experiment with the spices.

Carrot Cake III

yes, this cake was delicious. i made it for my husband's birthday and everyone loved it. i don't usually like carrot cake at all, but i liked this. i used these suggestions from other reviews: half white, half brown sugar; 3/4 cup oil and 1/2 cup applesauce instead of full amount of oil; only about 2 1/2 cups of powdered sugar in the frosting. i had lots of frosting left over, but my husband says i didn't put enough on the cake and has been putting the extra on each individual piece he eats! this recipe does have a lot of nuts, so if you aren't a big fan of them, you should probably cut back on the pecans in the cake and the frosting. i really liked them, though. thanks a bunch for this recipe!

Hamburger Goulash

we liked this fairly well--7-year-old said it was delicious, husband said it was bland, i say it was super easy to make with ingredients i had on hand and tasted pretty good to boot. not a particularly exciting or fancy dish, but a good weeknight meal. leftovers will go well in a thermos for 7-year-old's lunch tomorrow. i used veggie crumbles instead of ground beef and added beef bouillon powder and extra water, but otherwise followed the recipe. i sprinkled some shredded cheddar on before serving.

Spiced Chicken Loaf

this was good. my 7 year old loved it--she ate every bite and asked for more. my husband had seconds as well. i have never had anything made with ground chicken that i actually liked before this. i made it exactly according to the recipe, except my package of ground chicken was only .75 pounds and i added a splash of water to make sure it wasn't too dry. the edges and bottom got a little too brown, so next time i'll watch it and take it out a little earlier.

Oat and Herb Encrusted Turkey

we (husband, 7-year-old, and i) didn't really care for this. i tried the suggestions from other reviewers--used half panko and half oatmeal, halved the spices--but the breading still wasn't quite right. i'm not sure what it was, but the flavors just didn't seem to work. we didn't care for the sauce either; we thought it was a little too yogurt-y.

Beefy Mushroom Barley Soup

my family and i enjoyed this (including my 7 year old who usually says she doesn't like beef). the sour cream is definitely important, even though i'm sure it would still be good without it. i think it gives it more body and smooths out the flavor. it was really easy to make, too. i'll definitely make this again.

Marinade for Chicken

wow, i thought this was really delicious. my 6 year old said it was just okay, but she ate it all anyway. i was afraid that i might be able to taste some of the individual ingredients sticking out in the flavor, but i really couldn't. it all blended together really nicely. the chicken ended up looking really good too. yum!

Cinnamon Sweet Potato Slices

good and easy. instead of melting butter, i just rubbed butter on the baking pan and on top of the potato slices using a paper towel. husband and 7 year old daughter both liked it.
