I have three beautiful boys. A 12-year old, a 4 year-old, and a 3 year-old. I've been married for almost 5 years. I also work full time outside the home. My hands are rather full!
My favorite things to cook
Quick and easy. We go out to eat a lot and this needs to stop. I don't mind cooking, I just don't have a lot of variety. Thank God I found this website! I also bake and sell homemade cheesecakes, especially around the holidays.
My favorite family cooking traditions
None yet, but I would like to change that.
My cooking triumphs
Any meal where I have to boil something and I manage to do it without boiling it over on the stove.

Shepherd's Pie VI
I read other reviews and tweaked mine a bit. I used 2 lbs ground chuck, browned with onions, 2 minced garlic cloves, and a few dashes of Worstershire sauce on Tuesday. On Wednesday I warmed the beef/onions, added about 2 Tbsps ketchup, a can of beef broth, a 1 lb pkg of frozen carrots & peas, a can of beef gravy, a packet of onion soup mix and about 1/3 cup of water. I let that simmer for about 10 minutes while I got the potatoes ready. Now here is where I cut a corner I shouldn't have. I mixed 2 pkgs of instant mashed potatoes. I should have made the Garlic Mashed Red Potatoes (found on this site). I also should have put this in a larger casserole dish than a 2 qt. Anyway, I topped it with a combo of shredded colby/monterey jack and baked for 20 minutes. My husband really liked it. He said it reminded him of a thicker beef stew with mashed potatoes on top. I will make it again and keep tweaking it until I am more satisfied with it, perhaps using corn with the peas instead of carrots next time.

Broiled Tilapia Parmesan
This was so awesome. I made it last night. My husband also does not like fish but he loved this. My 10 year-old son loved it too. We were going to grill them but it started raining. I had already wrapped them in foil, so I went ahead and broiled them in foil for about 7 or 8 minutes with the topping already on. Then I opened the foil and let them broil for a few more minutes. I checked them and when they were flaky with a fork I knew they were ready. A really awesome recipe!

Italian Green Bean Chicken
This was pretty good. Very easy to make. Needs more garlic or something to spice it up just a bit more.
