Grilled Potatoes and Onion
These were wonderful and easy! The only reason for the 4 stars was due cooking time being pretty long.. Perhaps I cut my potatoes alittle thick, who knows.. But I will definitely try these again!

My son helped me make this and we had a great time.. They are pretty rich.. Can only have a few pieces at a time.. Very good though~

Chicken Enchiladas V
This is a great recipe to build on. I cooked my chicken in a crockpot with salsa all day and then shredded it. I added black beans to the filling also. Needed to make extra sauce so I used to cans of condensed soup and extra sour cream and then had left sauce for another time.. Mmm Mmm Good.
