I love to cook, read, play on the computer, and watch tv. I grew up in the country with my Mom cooking very good country food, but we always ate the same things. Now I'm trying to get out of that rut, and discover all these new recipes.
My favorite things to cook
I love to cook anything with peanut butter in it. I also like to cook rice dishes. Anything you can throw together using leftovers I love.
My favorite family cooking traditions
I always loved my Mom to make potato salad and grilled hamburgers on Easter with a ton of diffent pies. That was always my favorite. She would always ask me what I wanted to eat on Easter, and this was always my request.
My cooking tragedies
The first time I ever baked a turkey I cooked it upside down. I was so depressed about that, because I love the skin. I couldn't get the skin to cook up right though. It was all soggy, and gross.

Buttermilk Pancakes II
After getting the batter ready it was way to runny so I had to add alot more flour. They turned out great! I will keep making these over and over.

Blueberry Cheesecake
Good but not great. Will try using lemon juice next time as it was a bit bland. Best to eat the next day after it's been refrigerated over night or you'll be eating custard.

Burrito Pie
I thought this was really good after I changed it that's why I'm giving it 4 stars. The whole family loved it. First I did not mix the beans with the meat. Instead I spread it on the tortillas, and placed the bean side down. I also used some taco seasoning in the meat without extra water. Even after draining the meat, and canned vegetables the meat mixture was still to runny. May also leave the taco sauce out of the mix next time, but still add it in somewhere along the line. With each tortilla layer I used 3 tortillas instead of one because it would have been to soggy. Also, I used alot of extra cheese. I'm not so sure about freezing this because it gets soggy easiliy.
