I'm just your average wife/mom/granny. I have been married for 46 years - yes, to the same guy. I have four wonderful sons, 4 fantastic grandkids and 3 great-grandkids.
My favorite things to cook
Mexican dishes. Could be because I was born and still here in El Paso, Texas. I also love to bake.
My favorite family cooking traditions
I didn't cook at all before I was married. Couldn't cook and had to learn through trial and error.
My cooking triumphs
I am always asked to cook mexican dishes. I love to cook tacos, enchiladas, but my specialty is Chili Rellanos with homemade sauce.
My cooking tragedies
When I was first married I tried to impress my husband and brother with chicken and dumplings. I don't know what I did, but it was more like chicken soup. I've come a long way since that 17 year old girl, but still make some complete flops.

Chicken Fried Chicken
I would rate this a 5, but changed it. Sure it is wonderful as written, but added extra ingredients. This is what I did - as other suggested I used an egg, but also added two tablespoons of Ranch dressing. I also added two finely chopped jalapenos. Instead of the saltines I used Keebler Buttery Garlic crackers. It was very moist and we loved it. I am thinking about adding chopped pecans to it the next time without the jalapenos. Just all kind of things you can do with this wonderful recipe. Thanks CASSJW for a fantastic recipe.

Old Settlers' Baked Beans
Made this yesterday. I would rate it a five, but did change it. I added two jalapenos, a sprinkling of red pepper flakes instead of black pepper, Left the white sugar out completely and next time will cut down on the brown sugar. I cooked the bacon, drained the grease, then added the rest of the ingredients. Very good dish. My hubby loved it. I'm sure it is just as good as is, but we like spicy. Next time I think I will add shredded cheese to it.

Absolute Mexican Cornbread
Both my husband and I loved this cornbread. I would give it more than five stars, but changed some things as others suggested. Half the butter, Half the sugar. I added red pepper flakes and chopped jalapenos. It makes a lot, but freezes beautifully. Try it - I guarantee you will love it. Will be added to my favorite recipes. Love it.
