Pork Chops with Fresh Tomato, Onion, Garlic, and Feta
Again another one over the fence into the keeper file. Wow! Simple and fast. I have not cooked a piece of pork on the stove top for some time. This is a home run. Used tenderloin because I did not have pork chops but you could even substite any mean including LAMB. Great taste, presentation and simple. Hard to find yellow small tomatoes. The next go around I will follow a couple of suggestions from other people namely 1. reduce the balsamic vinegar in the pan when I am frying the pork It gave it a blackened appearance and increased the flavor. 2. 2 big hands full of fresh spinach. Gave it more color, flavor, just reduced the down on the second cooking of the onions. Also if you want to cheat, I saw in the store crumbled feta with basil and bits of dried tomatoes.

Pasta Sauce with Italian Sausage
I assembled this in a matter of minutes after I browned the sausage and hamburger together. Since I am a diabetic I am using whole wheat pasta multi grain and very little more....I found the sauce easy, quick, simple, and fantastic aroma and taste. For the two of us I usually double the recipes because I freeze the remainder of the portion. To keep it honest I tried the original recipe first and gave it a 5 star. In the remainder of the pot I mixed in some Splenda and Cayenne pepper for the next round. The original recipe was an absolutely excellent starting point. Who knows where we go from there…..

Cha Cha's White Chicken Chili
First of all Excellent the tase is quite unique. Two helpful hints. I put everything together before I even turned on the flame on my big pot. Also I put the cheese in last so that it would not burn on the bottom of the pot. Made it both ways and frankly both ways turned out the same with the surprise when you eat it the next day. WOW!
