Slow Cooker London Broil

The tomato soup added a taste that was unusual, but surprisingly good. The only changes I made were adding a good amount of black pepper to season the meat, and instead of using dry onion soup mix, I peeled a red onion and layered the slices on top of the beef. Some other reviewers said the meat came out tough. Not sure why unless it did not cook long enough. My london broil came out fork tender after about 7.5 hours.

Italian Chicken Marinade

Per other posters, made a few minor adjustments: poked holes in the chicken to let the marinade soak in, used fresh minced garlic, added a little dash of red pepper flakes, and marinated only about 5 hours. Also used the oven instead of the grill to cook the chicken. Came out very tender with very nice flavor. I'll be making this often.

Garlic and Tomato Tilapia

Beautiful on the plate and very tasty. I used diced plum tomatoes, and, per some other suggestions by reviewers, added a little more garlic, chopped red onion and basil to this recipe. Before I baked the tilapia for the first ten minutes, I seasoned it with just a little sea salt and a good amount of fresh ground black pepper, then drizzled just a little olive oil over it and a tiny bit of butter. This was delicious. My only suggestion would be to be sure you are liberal with your spices when you make this. Thanks for a great recipe!

Baked Ziti I

This was delicious, even with the meat ommitted. I did make a half sour cream/half ricotta mixture (rather than all sour cream), added two cloves of garlic, and added some italian seasoning with red pepper flakes to the spaghetti sauce. The sour cream really is what makes this baked ziti special. I'll be cooking this again and again!

Easy Tilapia with Wine and Tomatoes

Maybe I did something wrong. I chose this recipe based on the rave reviews, but it turned out just average for me. Except for adding chopped red onion and (like some other reviewers), cooking the fish in the oven, I followed the directions as written. I like tilapia, so it tasted fine, but it was not especially flavorful. In the future I'll go back to my favorite tilapia recipe: Easy Baked Tilapia submitted by FMCNerney.

Juicy Roasted Chicken

WOW! This chicken was SO easy to prepare, very moist, and VERY flavorful. I won't roast a chicken in any other way in the future. Few small changes: I lightly buttered the skin of the whole chicken first. Also, since I had no onion powder, I used garlic salt instead with great results. Lastly, I put half a red onion, and a few cloves of garlic in the cavity with the celery. Delicious recipe. Highly recommended!

Tomato-Egg Scramble

This was fast and easy to prepare, and very delicious. I only changed one thing: rather than serving it over toast, I served it over a tortilla that I heated in just a tiny bit of olive oil until just crispy. Very flavorful.

Roast Pork Loin Chop

This was easy; great for a weeknight/after work and school meal. I marinaded the pork the night before, and added hot sauce to the water to give the dish some extra flavor. Pork came out nice and tender. Very good.

Easy Baked Tilapia

Very easy, flavorful, and cost-friendly! This would be a good dish for someone who is either new to eating fish, or is not usually a fish lover, as tilapia is very mild. For those of us who love fish, it's very good. I took suggestions from other reviews and made the following small changes: used frozen but slightly thawed fish and veggies, coated the fish with just a little olive oil and butter, added fresh garlic, and used recommended spices liberally and added a couple of other spices as well. Lastly, I sprinkled bread crumbs on the fish for the last ten minutes of cooking, and left the dish uncovered for that length of time as well. Very tasty.

Deer Chop Hurry

We really liked this. I used hot and spicy ketchup, and since I was very low on onions, I also mixed in garlic. Didn't have onion soup mix either, so I used garlic and herbs soup mix. Very tasty!

Greek Penne and Chicken

My family loved this! They said it tasted like something you might order at The Olive Garden, but even better! The artichokes really add something special to this dish. This recipe is supposed to serve 4, but the three of us all had two helpings, and there was enough leftover for at least two more. I made a few changes to the recipe, per several other reviews: 1. I used a whole 10 oz container of fresh cherry tomatoes (chopped in half). I don't think anyone else suggested this, but they went very well with this dish. 2. I went just a little bit heavier on the spices. 3. I used about 12 ounces of pasta, which is less than the recipe calls for but still plenty. 4. I flavored the chicken with salt, pepper and oregano and sauteed it in a mixture of olive oil and butter. REALLY good! 5. I added about 1/4 cup of heavy cream (per the suggestion of SEVERAL other reviews) right at the end so that the dish didn't turn out too dry. Delicious! Just make sure you have some extra feta cheese to crumble on top at the table.

Microwave Corn on the Cob

I agree with several other reviewers;no need for a paper towel - just leave the corn in the husk. When you are finished microwaving, the husks and silk pull off extremely easily! Do be careful, because the husks will be quite hot. Two to three minutes per ear of corn depending on the size of the ears and the power of your microwave should do it. Keep an eye on the ears, so as not to overcook.

Mainely Fish

Very colorful and beautiful presentation. I'm not very good at cooking fish, but this time I was able to turn out a fish dish that was very flavorful and delicious. I did make a few small changes. I used a bigger piece of fish than the recipe calls for, went just a little heavier on the spices,added garlic salt, and drizzled a little bit of butter on my haddock. And, while the recipe does not specify what kind of onion to use, I used a red onion with excellent results. Also, I did not use capers, but instead added artichoke hearts and fresh garlic in addition to the recommended ingredients. Lastly, I took the suggestion found in another review to place the fish on a good-sized bed of fresh spinach drizzled in olive oil before cooking, and I would also recommend this to anyone trying this recipe. Looking forward to making this again!
