I have been through Culinary Arts classes off & on since 1979 and have come up with many new ways of putting recipes together. Everyone has there own taste buds, so, all food iems prepared are going to taste different to all people, which is why I try to come up with new things all of the time.
I go by a particular recipe and alter it in one way or another, in order to make it my own recipe. Although it may be 1 in 100, there are still people out there who are on a particular type of diet.
My favorite things to cook
Desserts (stressed spelled backwards lol)cakes, cookies, candies, cheesecakes, fruit pies, cream pies, specialties; Meats; Casseroles;
My favorite family cooking traditions
Doing everything from scratch. My cheesecakes, cream pies, candies, chilis, soups, and many others are done from scratch in my kitchen. I slow cook all of the above items also. Some people are able to complete these items in 30 min., but I can take hours cooking these items (ex., my cream pies usually take 2-3 hrs.; my candies take up to 4 hrs.)
My cooking triumphs
Whatever it is I end up cooking, I always get good remarks from the people who are consuming it.
My cooking tragedies
There are times when I may have to end up throwing out an item due to overcooking or not using the correct methods or ingredients. The one that got me the most is when I was trying to make my own homemade chocolate. I cooked it on the stove for a good 5 hrs., but it still turned out rubbery and would not stiffen to a brittle stage.
